Here in Australia . Cut them into lamb cutlets ( here we buy them as cutlets). Season with salt, pepper and rosemary dry or fresh and olive oil then onto the bbq. Absolutely delicious.

Grass fed lamb, especially from salt marshes or coastal areas from Wales is really good. Here in UK it's simple. UK lamb is generally more expensive than Kiwi and Aussie Lamb. In general,. lamb born during Spring would be grass fed. Lamb born Autumn will be on grain and finished on grass. The flavour is more subtle when the last lambing season's lamb come to market from 6 months to 8months old. After, it starts to taste stronger and become firmer. (If you don't like this, switch to quality Kiwi and Aussie Lamb which would've been slaughtered young then exported. If it's in vac-pack rinse or brine it, fck the cross contamination risk, just be careful. The liquid from the packing imparts a strong flavour to the meat. Try it.) Or cook it differently like braising instead of roast, flavour more strongly like capers, garlic, curry. Here, if we want a rack that was cooked like that, we will only have it during the 'new season' British lamb. The wife loves lamb but hates gamey flavours. 4 months window in the year. But, with the price of lamb, better than being disappointed.

New Zealand lamb are dual purpose wool snd meat production sheep. They put on more wool increasing the Lanolin oil produced in the animal to keep a healthy coat. American breeds are known as hair sheep. They produce thin coarse hair for summer coats and shed their wool winter fleece in the spring. This adaptation leads to less fat retention and less Lanolin oil produced by the animal reducing its muttony(gamey) flavor and are often raised on forage over feed until it’s time to sell.

Americans basically only eat grain fed beef. It's weird. Since I started working in the caribbean I've only been able to eat imported meat from America. Idk what it is about it, but the steaks at the grocery store are like $30 and taste flavourless. It's definitely the grain fed stuff. Also the meat is a different colour, it's not as dark. Like the meat is a paler red/pink colour vs the steaks in the UK that look more burgundy/darker red.

My dad would sometimes make pork chops and pancakes when I was a kid. He told me when I was an adult that it was actually lamb chops. Didn’t want me to feel bad as a kid 🤷♀️… I told him it was too delicious to have cared!! 😝😂 May be strange but it’s delicious!

I'm a New Zealander, I find our lamb and mutton, at least for me and most people I personally know, tastes best when cooked medium well to well done. I have done lamb cooked as shown in the video a couple times and it was a bit gamey for me. Im really quite intrigued to taste grain-fed lamb now though..... (had lamb for dinner tonight. go figure)

You could probably buy directly from a farmer and get a lamb processed by meat processing facility. Just make sure to have a big enough freezer or go in together with friends/family. We did that for half a cow. Hoping to do that next for pork with local farmers. I should go see if some of the local sheep farmers sell lamb. You can often find them online or at local farmer’s markets.

Lambs not really a gamey meat tho, gamey meats tend to be hunted, hence game, meanwhile lamb has to be farmed. “Gamey” is just a descriptor that essentially boils down to less fatty when comparing the same species, IE farmed duck vs shot duck

@@allthebanter9316 Lamb isn't a gamey as some meats--mutton is much more so, but there's still a definite "funky" element you'll get whenever eating any sheep or goat. For myself i'm used to it, and a lot of ethnic cuisines that cook a lot of goats and sheep know how to mask some of that with potent herbs and spices. Still, I would say that Lamb and Mutton are still "gamier" than some wild meats like Venison or Elk.

If you dislike the gaminess, then you can also let the lamb “marinate” in milk overnight (we do it often in greece) After that pad it dry and use it as wanted. It won’t smell or taste gamie 😊

I do that when i shoot grouse, i soak it in Milk for 1-2 hours, i still like the taste to be a little "stronger" or gamier. Season to flavour and throw it on the grill, baste it all the way through cooking with butter. Amazing.

Looove lamb. We have grassfed lamb here in Australia and certain cuts have different flavours. Lamb shanks and steaks have the mildest flavour, but I don’t recommend eating the fat because it has a weird texture. You’ll love slow cooked lamb shanks in red wine sauce with mash. Absolutely delicious.

I ordered minced pie in a restaurant in Clarksville, TN. The owner/proprietor came out to meet me, because she wanted to know where I was from. Apparently, she stated that she expected I was an Aussie by my order. I am from Texas, but my mom had prepared mutton when I was a kid, because it was always available there. It just is not a common commodity throughout American grocery stores. When it is available, it is usually very expensive and people do not typically know how to prepare it here in the States. Mutton is good, but appears rarely here in the States.

Lamb has always been one of my favorite types of meat, never really got why people didn’t like it.
People just generally don't commonly eat it in the US, but before you go 🤓☝️ "uhm ashkully" yes you are the expectation congratulations, therefore they don't know what to do with it or never really think about wanting to have it. I never had it growing up so I never wanted to or cared to have it, but had it once and it's fine I mean I'm not going out of my way to find it, though if someone cooks it I'll finish it.

You don't need any of that to enjoy better lamb. You need to wet age it longer than the stores do. We'd order NZ lamb at our shop, but keep them in the fridge (in vacuum bags) for two weeks before selling them. They would even look green under regular indoor lighting, and it smells a lot stronger, but the meat has less intense lamb flavor and is much more tender as well.

I like grass fed lamb. serve with a fresh mint chutney. grass fed is much leaner, which I prefer, and the bold meaty flavor is a nice change from the industrialized meat that's so common in the U.S.

Can you please make dishes that don't require a BBQ/smoker? I don't have that kinda money atm, as much as I do love your content I really wish you'd show us recipes for those that don't have all this fancy or expensive equipment. Do stuff for the common folk and those who don't really have the luxury to go out of their way to get imported meats and pricey cookware. The thermal spike is easy enough to get, but stuff like a smoker/bbq is going to be really pricey. I love your food but I really want to be able to cook some of these yummy meats and treats.

In the southern parts of the USA it is difficult to even find lamb for sale unless you're in a major city and even then it is absurdly expensive. The only time I've ever eaten lamb was in the form of some sausages I found for sale at the local Wal-Mart. They were delicious but a little on the pricey side and then next time I felt like eating them again they had stopped carrying them.
