@@elgringo1893u can find maki everywhere in Japan.. mostly long-uncut maki.. if u ever been to Japan, I would recommend a small restaurant (it's called gyosanko or something like that) near Hakodate train station cuz they got those soft-shell crab ramen and a couple of makis to choose from their menus The other one is ekimae in wakamatsu-cho cuz they got a lot of sushis to choose from and of course maki too

I love Japanese food, but I can't get my mind wrapped around it, it is raw fish over sticky rice right? Is it like an acquired taste? Yeah sushi is extremely fresh but still it hardly has any flavor. The challenge was supposed to be inside out sushi where the rice was covering the nori. The judge ssying "It doesn't meet the brief" means that the challenge was not fulfilled as expected. The comments here seams to take it on a different context and insults the chef judge based on ignorance.

The amount of ignorance from this chat is astounding. When Michael said ‘It doesn’t meet the brief’, he meant it didn’t meet the specific requirements of the challenge: rice on the outside. Of course any chef would know basic things about sushi rolls, let alone Michael!

They're always like that on MC Canada, it's a way better format than MC US, at least in the earlier seasons. MC US has gotten better with that recently as well though.

If you actually watched the full episode, the instruction was for them to make maki with the rice outside. Not sandwiched between two sheets like Barry did, which falls neither between Japanese and Californian style of maki.

These chefs have specific challenges they need apply to the dishes they create. He’s a judge. So he has to be picky about each dish served. THAT is what the show is about.
