Hi friends! I'm Jennifer, a forty-something wife and mother of 7 children ages 8 - 24. We are Catholic. We homeschool. We cook from scratch. We farm cranberries. We drink coffee. We advocate for Down syndrome awareness. We are loud. We are chaotic.
Here I'll share vlogs about all these things, what I'm doing that works and what I've tried but didn't work. I hope to encourage you in your journey through motherhood, homeschooling, learning to cook, and growing in your faith through it all.

Love the fish fry. I'm 72 and still don't eat meat on a Friday, anytime. Growing up it was always macaroni with broccoli or cauliflower and then a piece of fish. Pizza Fridays here. No pepperoni, just mozzarella and veggie pie, ricotta and broccoli. Enjoy seeing Joe love his music!!

Watching your fish fry prep reminds me of my grandpa! He’s been gone over 20 years, but the memories are strong. I miss those days. Up at the crack of dawn, fortified with Snickers bars and Coke, sitting in the fishing boat. 😂 I wasn’t much for baiting my own hook, but grandpa was a patient teacher. My prep job was always scaling. He used olive oil and shallowed fried in a couple electric skillets. Saltine crackers and pepper were a must! His best friend gifted him with a photo collage of their Canada fishing trips with the quote, ‘There’s six times more water than land, so anybody can see the Good Lord intended man to fish more than work.’ My grandpa did a whole lot of both well! ☺️🥰😁

My husband’s nephew lives up in Merrill. He wants us to come for a Friday night fish fry. My hubby almost went the last time. But flying in from Washington state would be awfully expensive even if it would be for a great cause. But I’m sure we’ll probably go this summer. We love visiting Wisconsin. And making mayo from Acre Homestead is my go to from now on. It’s so easy and tastes do good. Homemade tartar is super easy to make!

I just made your apple crisp recipe last week...it was delicious served hot and also yummy when served as an accompaniment to plain breakfast yogurt. Loved seeing your fish fry...being landlocked here in Eastern Washington we don't have as many fish choices. For us, fish is a very expensive meal option, haha. "Peters" fort was great! After watching this video I can see why you don't offer up many Lenten casserole videos, haha. Your family eats very well with the wonderful fish options you have available. Here, the easiest fish option is trout and...YUCK, lol. And, what? No Yuppie-Hippie diy mayo going on at your house? Ha!

So you may have read about the note Page 29 - flunked out kids, “some kids” as opposed to the sweet girl who gave her a rice recipe. Jennifer is a mother of a special needs child and has printed in her cookbook her true feeling about kids with needs - other than her very own.. She’s a hypocrite. Makes me very sad.
@acountrylife
@acountrylife 2 жыл бұрын
@Nancy Cowan. Hi Nancy, I’m surprised by your comments regarding my quote “some kids” I refer to in my cookbook. Those first students of mine were not kids with disabilities, rather, 17 year olds who refused to attend PE and instead skipped out of school. Wisconsin graduation requirements stated they needed this .5 credit to receive their diploma. A couple missed PE because of pregnancy and the others were in trouble with the law. I am not a hypocrite; please do not make assumptions about my students from 1995, nor pass judgement on my description of them. I have fond memories with that, my first, class of students and worked my butt off to ensure each one graduated.

Just wondering if you sifted your flour for the recipe. I notice it said sifted flour so you measure after you sift right. My friend taught me that one about the sifted thing on how they word it whether you sift before or after lol. Fish and everything looked amazing. Coleslaw is a must for a fish fry for me in Pennsylvania also. And the cracker crumb breading is the best on fish for me. Sometimes I use a cornbread based coating like on perch or something but cracker crumbs are good if you haven't tried.

I can't remember if I shared this with you or not....when we do fish I make a batter of pancake mix (Mrs. Butterworth's) and 7UP. Not real thick but like pancake batter...dip your fish and then deep fat fry. I guarantee the BEST fish you will ever eat. Heavenly! Then you have to make cocktail sauce for dipping....catsup and horseradish....YUMMO!
@abbysmith2754

What are the measurements of pancake mix and 7UP, please?
@cindakellogg1307
@cindakellogg1307 2 жыл бұрын
@@abbysmith2754 It's kind of done by eyeing it! ha Depending on how much fish you have...start with a couple of cups of mix then start adding your 7UP...you want the consistency to be like pancake batter...not to thin but then again not to thick. You'll be able to tell...dip your fish then deep fat fry. A surgeon taught my father how to make this...he taught my dad how to fillet and then this recipe. It is SO good! We used to eat so much we would make ourselves sick! Glutens we are! Hope this works for you Abby. Cut your pieces of fish like Warren did. I googled it and they were saying one cup of mix to one cup of 7UP. Also, the pancake mix should be the complete one, where you just add a liquid.

This always makes me laugh. People tell me I make the best potato salad and ask for my recipe. They then tell me that theirs doesn't taste like mine. I ask "how did you make it?" Answer: I don't like Miracle Whip, so I used mayo....I didn't have red potatoes, so I used russets and let them get cold before dicing them.....I added hard boiled eggs...I used white onions instead of red....I don't like celery, so I left it out..etc. Perhaps that's why it didn't taste like mine? Anyway, your fish fry looks wonderful, especially during Lent. My go to on Fridays is fish filet sandwiches. Hubby never gets tired of them. Blessings to you during this season.
