As a Dutchman I am proud that Heineken is trolling people with the flavour of their beers, and I am not only talking about their non-alcoholic ones. If you ever want to taste real good/tasty 'pils/pilsner' (ordinary Dutch beer) I would suggest trying Grolsch, Brand or Hertog Jan (increasing in strength of flavour). It is funny that every beer drinking Dutch(wo)man is so critical about Heineken, we even call it urine or cat urine (which is of course an overexaggeration), while in foreigners enjoy Heineken.

While not in the same way, I have a very severe sensitivity to ethanol, but the taste of wood and aromatics is very appealing to me. Sadly, a LOT of those tastes are impossible to get in otherwise non organic extraction, but if these substitutes get ANY CLOSE to the taste you'd find in barrel-aged stuff without giving me a hangover in 10 minutes, I am all in. I really got here because such tastes and aromas are exotic for the very reason they can't be found in any drink that isn't alcoholic! I am always looking forwards to advances in such non-alcoholic drinks for that reason.

The 3 Mezcal labels you can put on your bottle are ‘Mezcal ancestral,’ ‘Mezcal artesanal,’ or simply ‘Mezcal.’ Ancestral has the most strict requirements, mainly being it has to be made with super old school clay pot stills. Artesanal is the most common label you’ll find in the States, the agave needs to be roasted underground & crushed with a tahona, but is distilled with a more moderen copper pot still. And if it’s labeled simply Mezcal, it means it’s made in a fairly industrial way, usually cooking agave in an autoclave, mechanically crushed, and distilled in stainless steel column stills.

i would love to see this. Ive put a bit of time into looking at how to make interesting drinks. Its always been my dream to be able to afford the equipment to make a non alcoholic distilled drinks that capture the complexity of real alchohol. I have the 3 seedlip drinks they offer, and I'm always shocked when people say it just tastes like water. I love to add some to apple cider for the spice. I also got a few of the Bax Botanics when I was over in the UK and would be interested to see then take a trip to the UK to visit all the Gin distillaries and try some of these non alcoholic offerings, as the trend has more traction over there. But overall, you would need to do basically vaccume cold distillary to protect any flavors, and do some shinanigans to replicate flavor profiles because the flavors are super volitile when not captured in alcohol. I'd be super interested to see anyone try though.

Dry weeks don't mean much to me, because I don't drink alcohol on any consistent basis. It isn't a daily, or really even a weekly, thing for me. I may have a dram of scotch every day for three or four days then go a week or two before I drink anything, Or a may have a month where I drink something every 3-5 days, occasionaly having something 2 days in a row. I've gone a month without drinking anything, have a drink, then go another two weeks without alcohol. It isn't consistent. When I do drink, it could be scotch ( I have a variety of bottles from Aberlour, Ardbeg, Lagavulin, Glenfiddich, and more), or maybe bourbon (Buffalo Trace is my go to there), or some rum, tequila, or vodka-typically in a cocktail or mixed drink. I also use things like rum and kirschwasser when baking around the holidays (rum balls, rum cake, Black Forest cake, etc). I might have a Guiness or (if it is around Octoberfest) a märzen beer because I buy them to make bratwurst or if it is needed for a recipe. Same goes for wine. If I need it for a recipe I will get some and then finish the bottle (I'm the only one who drinks alcohol in my house, so a whole bottle of wine either has to be finished within a few days or it turns. When I go out I'll sometimes get a glass, because I do enjoy good wines. Occasionally I also get things like sake or brandy, but not often. Now COFFEE is practically every day for me. Two cups (and by cups I meen 15oz mugs) every morning... almost. Lately, I switch it out for tea amybe one day a week if I feel the caffeine is creating too much tension. My go to drink is coffee, tea (hot or iced), or water.

The story behind Seedlip is pretty cool. A good option as an alternative to gin for building mocktails. They aren't a de-alcoholized spirit, they are a botanical distilled water. The comparison to something like a "cucumber water" isn't far off. Sort of like the difference between a distilled gin vs a compound gin.

I took up making my own chai spice. My rule is it has to stand on its own in hot water as an unsweetened beverage. Ground, toasted cardamon has a nice bitter note, toasted black pepper and ginger have that nice warming note as well which obviously we all like in booze, and what I make can stand on its own as a beverage either brewed hot in water or brewed and allowed to cool :). I think the flavour is just complex enough to be sippable, which I'm always after when it comes to a non-impairing drink. It don't do too bad with black tea either ;). and it's a mean hot toddy or mulled wine blend 🤙

Have to disagree on the Guinness, I think it's remarkably close. And Athletic is a fabulous light beer swap. But you have to understand, despite marketing (and much like mock meats) very few of them are going for a 1 to 1 replica. They are looking to create a similar experience. So far, as you noted, most liquor isn't quite there. Seedlip is the closest for a light, gin-esque, experience, which is very good when cold, with the Herbal one being the best. So it's not "gin" but "gin like".
