I've worked with few Japanese chefs in the kitchen before for a very short time. They are really silent and focused on what they are doing. One thing that is really fascinating is their discipline. As you can see the kitchen is very clean

How all kitchens should look (but don't.) I'm not in the food industry, but I worked for a couple months at a high-end restaurant in Scotland, and the kitchen was absolutely immaculate, like this one. Not one speck of grease or food anywhere. Floors you could eat off of (well, at the beginning of the shift, anyway.) I then worked one day at an acquaintance's restaurant as a sort of "guest chef" for the night and was absolutely appalled at the state of affairs. Months-old (at least) caked on grease, dirty floors, rotting food under the stove and in crevices between appliances; just incredible. I'm not a neat freak by any stretch, but I just had to scrub that shit all the way down if I were to eat there again. Didn't get paid extra, but was satisfied that I did my part to get that kitchen like the Scottish kitchen. I wonder how long that lasted .... There's no excuse for a commercial kitchen not to be completely cleaned down every night.

"Your sins will be forgiven if you have faith", does this mean God wanted human to commit sins just to have their faith? Logically, if God actually have powers and stopped every crime, then no one would have to bear the pain of sins, and people will lose faith in God. Does this mean, God is causing the crimes on purpose?

totally random but this man can probably lift that 'gold bar in a box' with his forearm strength. The way he's flipping that wok is actually quite hard with all those ingredient in there

Proper technique is important and really helps, if you watch closely he is using the long handle to lever the wok with it wedged between his arm and body. But yeah, doing that all day with or without technique means his forearms are probably solid as a rock.

First thing you notice is how organized the kitchen is, second is how clean it is. Very little food splatter on the surfaces. Third is the attention to detail such as the placement of the food on the plate, wiping smears off and so on. All looks very tasty,

I love how japanese refine the way they cook things. Simple things like deep frying, grilling, eggs, raw fish and emphasis on the freshness of ingredients. Now i always strain eggs for a smooth texture unless a sunny side up haha

People I know always freak out about how runny the eggs are, and I have to remind them that the egg is being cooked at really high temps, it's not any less cooked an over easy or sunny side up and it's so hot when it hits the plate that it still cooks more and firms up.

Steel and black steel is cheaper than cast iron but also give the same result which is why steel pan is widely use in many restaurants. Another good option is a wok All of these 3 if taken care of can last long and they tend to be very durable because of the material.

If being dipped into 150°C oil isn't enough for being cooked, then I don't know how it's supposed to be done. The change of shape is the changing of the protein molecules when exposed to heat. The longer the egg stays in the bigger the change, but it doesn't mean that it's undercooked because it's still a tad bit runny, or dishes containing runny egg yolks would be taken as a health hazard and wouldn't be allowed for consumption. Also, the egg continues to be cooked until the heat gets spread to the rest of the ingredients when it falls over them on the plate. Therefore it's simply a matter of taste, just how certain people want their meat be cooked well done and certain others barely heated so it's not entirely raw.

@@helencomparoni2257 Adding on the gkalenaki, eggs in Japan have very strict rules such that their eggs are safe to even eat it raw anyway. That's why a common dish in Japan is just hot rice with a raw egg cracked and mixed into it and people don't usually worry that they'll get stomachache or something from it. Even though the residual heat from the rice cooks the egg a bit, it will still be pretty raw.

PLEASE TELL THE OWNER THIS : I’m an American, who absolutely loves his style of food. N I wish that I was there at his restaurant having a bowl of rice with the egg on top and the burger it looks delicious. I wish we had this in New York. Love you all ! 😇❤️
