most questions about why some characters can't learn certain jutsus will be answered later on. For example there are special "clan jutsus" like the shadow possession jutsu from the Nara clan. These jutsus are only taught between members of the clan.

Yeah it all depends on what your chakra nature is. Sasuke has fire and lightning which is what most Uchihas have. But Naruto has other chakra nature.

You don't see anyone outside of their clans using them because of how heavily guarded they are. The Yamanaka Clan (Mind Transfer Jutsu) and the Nara Clan (Shadow Possession)

If you think what Itachi did to Kakashi was frightening take into account he could have killed him if he really wanted to. This is the guy that at 7 yo graduated from the Ninja Academy at the top of his class after only one year, mastered the Sharingan at age 8 and was perfectly capable to fight off Anbu-Level Jonin,passed the Chunin Exams at the age of 10 became an ANBU Captain and slaughtered his whole clan at the age of 13. In the novel Itachi puts his girlfriend Izumi Uciha under Tsukuyomi.Making her think that they got married,had kids and lived happy ever after. What took decades in Izumi's head it happened in a mere one one-hundredth of one-one thousandth of one one-milionth or one one hundred-bilionth of a second. Ten picoseconds aka how much it takes for light to travel ~ 3mm. When the Genjutsu ended the shock was so powerful that it made Izumi's body expire. He could have easily do that to Kakashi. And the frightening thing is not that he can inflict so much physical and psychological pain in such a short amount of time is that he can perfectly control how much it lasts and how fast it goes by. He can put you through hell for 72 hours and make them feel like double or triple or make them go by slowly as hell to torment the shit out of you.

Because Too much chakara flows through body after opening the gates, it will wake you up instantly. Same goes For the Jinjuriki who has control over his tail beast, there partner can wake them up.

Genjutsu works on sharingan users. They have resitance to it and their are much better at handling them, but they are not immune. Kurenai is the top genjutsu user of the Hidden L. so probably it would have worked on an averege Uchiha. Itachi is just too good. Even he said that "genjutsu of that level" does not work on him, which implies that stronger genjutsu does.

Just some fun math here, If we simply take the real-time of the situation its about 3 minutes we see him in the Tsukuyomi. If that truly was 1 second in the Tsukuyomi then every 1 second there feels like at least 3 minutes of time. So Kakashi spent at least 540 days being stabbed over and over by Itachi. Just in case you thought it wasn't bad enough.
