You can do what you like in your own kitchen but I believe you do need to have a knowledge of the basics when you cook Italian. You can add anything you want to Aglio e Olio pasta but it is important you know the authentic way first. The way I see it is that if you start adding new ingredients, you need to create a name name to the dish. Olio food never stops creating so yes be creative and have fun cooking but leave the authentic recipes alone. Respect to all the Nonnas who are working hard to keep traditions alive.

I’m going to make my own video: The top three lessons I learned from Vincenzo. 1. Add pasta water to the sauce to let the starch help form the sauce 2. Add a little water when cooking garlic in oil to keep the garlic from burning 3. Undercook the pasta so that it finishes cooking in the pan with the sauce. I’ve grown as a cook and a half-Italian under Vincenzo’s tutelage.

@@vincenzosplate Actually I do love Akis' recipes and to be honest I do like parmesan in every spaghetti food and I put parmesan in my aglio e olio. But since there is no parmesan in authentic aglio e olio, yes it is difficult to call it aglio e olio. So next time I will try to taste this recipe with your way, even without cheese

When you talked about the 1950's music, I wanted to say "I feel you man" because I'm french and every time people want to put French music in video/movies they put some 50's Edith Piaf's songs... Like France never produced any other song since then 😅 Great vid by the way ! I remember eating Pasta Aglio e Oglio in Italy for the first time and being impressed at how tasty it was with just these few ingredients

Pasta al burro was developed into pasta Alfredo by a man in Rome. It is Italian, and it has Italian roots.

Not only do they make it complicated,many people add too many strong herbs which over power each other & create a mish mash of flavours & aromas that don't go well together & change the whole flavour of the dish.that it should be called something else.

I like that you are a very fair and not just a purist for the sake of tradition. You acknowledge that you can tweak a recipe according to your preferences but if you diverge too much then you have another dish completely. Very fair!

@@vincenzosplate I have been a chef over many years in Asia, The USA, and The UK. Italian cuisine is my favourite to cook and I am trying to improve by getting back to the basics and your channel is very helpful for that. I love to create my own versions of dishes, but I would never try to pass them off as the authentic dish. It makes me cringe when I see how messed-up some of the standard dishes are that British cooks concoct. If it's a lunch for myself I keep it simple. Today I am having Cacio e Pepe. I have just burnt some pepper I was warming in a pan. I noticed the robin in my garden asking me for food and after taking care of him I came back into a kitchen lightly misted with burnt pepper. At least it was nothing too expensive this time! When it is safe to reenter the kitchen I shall start again. I have now subscribed to your channel. All the best from Worcester, UK.

For me the perfect aglio e olio starts with the extra virgin olive oil at low temp with the sliced garlic, pepperoncini flakes, parsley stems chopped nicely, and 2-3 anchovies fillet... I store pasta water to create the emulsion before adding the pasta and one of the most important steps is to add the pasta al dente and finish cooking in the pan with the other ingredients...

This is my all time fave pasta I literally make it 4-5 times a week and I love adding lots of garlic. I always enjoy this with a big bowl of salad so quick and easy to make and delicious 😍

You actually do get more garlic flavor from crushed garlic rather than sliced without crushing, its a food science thing!

The starchy pasta water does make the sauce more „creamy“ in my opinion. Not cheese or milk creamy, but starch creamy, as compared to just oily.

@@thedocilefish Agreed: agitation helps the emulsification and aeration helps excess water to evaporate. Thinking about it a little more, I would say it definitely also depends on how much water you use. For aglio e olio I use quite a lot and let it boil down and concentrate in the pan before adding the unfinished pasta and continue to boil for a few minutes. A little less with carbonara or caccio e pepe since you add the water later in the process. But in both cases you want more of the starch creaminess. The water is really a main ingredient in those dishes. Not so much with tomato sauces or ragout for example, where you only add a little bit at the end with the main purpose to help the sauce cling better to the pasta or maybe hydrate the sauce a little.

I saw a news segment where they tested 10 olive oils sold in America. 9 were FAKE. Not olive oil at all. Maybe not even from Italia as written on the labels. Very disappointing. They had olive oil prices however.

hi debbie, can you give us a source for this? i've looked into fake olive oils before and it seems the highest figures i've seen are around 60% fake. also, some olive oil studies are done by taste and not actual laboratory experiments, which is what happened with a uc davis study whose findings went viral. tasting is obviously not reliable in terms of determining the purity of olive oil.

I love these videos, I've always felt that it's so important to learn about cultural dishes from that culture, not from another culture's version of it. I've gotten into huge arguments about carbonara because of so many people insisting on cream . . . now I'm picking fights about 'alfredo'. I've also recently learned that the garlic we get in the US is SO much less potent than the garlic in Italy, no wonder I use so much garlic!

I haven't had this since my grandmother died and I came across your video last week and made it twice. I had to admit I added anchovy the second time along with the pepper flakes and topped with Romano. My grandfather was a heathen Brit and my grandmother made his with the extra ingredients. But my mom's and her brothers grew up poor and lived off this dish. BTW, my grandfather was my grandmother's second husband and he loved Italian food so much. I think that's why he married my grandmother. She could literally make dirt taste Delicious

I sent your recipe to my mum who lives in Catalonia and she says she's going to make it tomorrow with little sardines in olive oil as she hasn't any anchovies in 😂 but after watching your recipe video she said she was instantly hungry and she'd not long eaten some cake 😂 👏👏

I have been an amateur cook since 2008, but I have ALWAYS been inspired by the masters (like Antonio Carluccio). And that’s exactly why I love your channel. I could see that over the years I have been extremely faithful to the principles of good Italian cuisine. And the good surprise is: I basically cook like you 90% of the time. The wonderful thing about you videos Vincenzo is the clear difference between the no-go-never-do-this ingredients and methods and points of personal preference......like the amount of garlic, addition of parsley etc. Good to keep a critical eye on your own videos and give the feedback you got back to us! “This music is stressing me out” 🤣 Chef you’re so funny 😆And oh yes, extra virgin olive oil is usually imported from Spain here (I’m from Singapore) that’s why it’s so expensive. I reckon In Mediterranean countries olive oil is produced locally that’s why it’s cheaper.

a little trick if you want to have a very fine paste of garlic but you don't have a garlinc mincer. Start by removing the stem inside the garlic (it's bitter and it's greenish at times) then chop the garlic in halves and put salt on the garlic the salt should coat the garlic, then start chopping finely, repeat untill your garlic turns almost into a paste, this will give nice flavour of garlic and you won't feel any garlic pieces in your mouth.

I like this video format a lot. It's a good way to learn in general, to show the common mistakes, to comment on them and to show the right way of doing. And it's always a pleasure to see you on the videos, I like your personality a lot. 12:28 Only remark I would give, and I think you already know, because you've mentioned it in a previous video, but the stirring with metal on the pan is painful both for the pan and for the ears, hope everybody uses wood, silicon or other cooking-synthetic material. Why not add the chilli flakes when cooking the garlic? That will help to bring out the oils in the chili and infuse flavour into the oil, no?

I completely agree with you. You can put whatever you want in the recipe, just don't call it Aglio e Olio or Carbonara if it's not the right ingredients.
