I just made ur 'roman old school, no cream' carbanera last night for my parents. They LOVED it. My dad loved it so much he refused to let me throw out the extra, even though I told him that u said it had to be eaten right away. So now he is eating it cold for breakfast and he said it is still wonderful. So thx u for showing us how to make that a while ago. It is perfect 🥰 !!!!! (BTW I had to order the pork jowl from a few state away so I am so happy it turned out good cuz I payed about 50$ for all the ingredients :) )

Just to give you an idea... the milk powder in there is used for several effects: - Decrease the amount of free water, and thus make it safer from a microbiological point of view. - Standardize the water content throughout Ragu, Bechamel and Pasta. If this is not equal, the long conservation would cause the pasta to become extremely soggy. - To thicken the Bechamel up... I guess they did not even use butter, but milk and flour, and thickened it up with milk powder But I agree: Always make your own lasagne! 💪

The reason why people add sugar in tomato sauce is to balance the acidity of it, especially if you’re using canned tomatoes which have a high acidity content. No one can argue with that.

Absolutely! Enhancing lasagna with quality ingredients like fresh herbs, spices, extra tomatoes, celery, onions, and a drizzle of olive oil can take it to the next level.
