GINA’S HOMEMADE BREAD
5 lbs Bread Flour (High-Gluten)
1 packet (1/4 oz) Active Dry Yeast (~2 ¼ tsp)
2 Tbsp Salt
8 cups warm Water (105-110 degrees F)

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?

Grandma Gina is the quintessential Grandma, she's the whole package, oozes love, caring and kindness, cherishes her family and supremely devoted to family, shares from the heart and gets pleasure in providing for anyone and everyone. Yes, bless the dough so it rises. Wrapping the bread was called Keeping the baby warm. Always give one loaf away or the next batch would be bad. That’s what my BisNonna always said.

When you see how lovingly she makes bread! She gently tucks it in under multiple blankets to keep it all warm. Can you imagine how well her children were cared for! How wonderful she is!

Well Karen when you read the cookbook it tells you keep the bread in a warm draft free place covered and let rest and the couch is a great place to take a rest what intrigues me the most is how she got one pack of yeast to raise up 5 pounds of flour! It’s got to be the afghans, and towels. The Dough doesn’t lose it’s rice temperature no more humidity grandmas are smart Resourceful and not to be messed with especially not Gina

brilliant... i don't know where we would go when our elders leave us behind without all of this amazing simple happy filled with wisdom life they lived. People now a days don't even appreciate or they are on fast forward kind of mode where we run from tradition way of simple life.

My grandad was a bread maker and in Portugal we are also 99% Catholic. We always blessed our bread too and if bread goes bad, I kiss it and ask God for forgiveness for wasting and throwing it out!

Hey Gina! I just made your pizza and with the leftover dough like you said "You could make some bread" so I tuned in to this video and Wow!...I made some bread..nice hot Italian bread.....thank you Mama Gina! My Mamma and I used to watch this together after she had her stroke. She loved when she sang. My Mamma Iolanda passed away last September of 2022 and this brings back memories because she would always sing together with her...

My biggest “take-away” from your videos is the tried and true old school techniques. People today think they need expensive appliances for everything but, in my opinion, doing things by hand teaches you how to get a feel for the food and you get consistent results every time. Wow!! I never thought to cover with so many blankets. I just finished a blanket made with yarn my dad gave me years ago. He passed in ‘16. I’ll use the blanket just for this purpose! He’d like that. Thank you!! God bless you.

Every Sunday I have a nice Italian lunch after church for my parents [Sicilian dad], my 2 sons, and my daughter, Italian son in law and grandbaby Sophia Angelina. I have been using Ginas recipes and I absolutely love her easy style and delicious food as well as her beautiful personality. My son has a KZbin channel[ Demetrios Levi] but I tell everyone that Gina is my favorite KZbinr equal to my son. I showed my folks Ginas videos when they were over yesterday and they loved her too! They want to make her zucchini and pasta fagoli. May God continue to bless her and her family.

It would be so fantastic if the Food Channel gave Grandma Gina her own television show! Everything she makes is inspirational. I never liked cooking very much before but after watching Gina work her magic I want to spend more time in the kitchen because she makes cooking look like so much fun. Great video! I can't imagine making 40 to 50 pounds of flour into bread. Yes, you certainly did work very hard - but it has kept you young. So very good to watch your make this bread and see the texture and how you did everything. I wanted a knife and tub of butter to go with a fat end piece of fresh bread - I could almost smell it. So good! Gina - keep on singing and spreading happiness!

That bread dough looks like silk...so beautiful, Gina! My Nonna Isabella made 6 loves every morning for her large family. She'd put some loaves in to bake then go next door to church for the 5am mass w/her lady friends. After mass everyone was welcome to come back to her house for coffee and hot bread...but NO talking. They said the Rosary then everyone went home to start their work for the day. So proud to come from such good people. Like you!

My ancestors come from Denmark all the way down to Egypt and all in between. Growing up, my Penn-Dutch (4 gen American) grandmother taught me to bake stuffed chickens, turkeys, apple pies. My Italian ancestors hailed from Pianella, my Italian grandfather married a Lithuanian and had my Dad. So, I love everything! I enjoy Gina very much, she makes me want to cry! No matter where my family came from, they ALL farmed and worked very hard. They came here for the same reason....to live free! God Bless America! God Bless Gina!

What a valuable video. It’s an heirloom! Everyone remembers how great grandmothers cooking and baking was but we lose the recipes or never paid attention to how lovingly the dishes were made. Here is somebody’s Nanna showing her love that can be passed on for generations to come. This is a national treasure!

Gma Gina's videos are great! I started wanting to make bread during the first pandemic shutdown and could only find recipes using fancy pants mixers or bread machines. This is a great old school recipe and it works Everytime! Another issue I had was my dough never rising properly. Now I wrap it up in a bunch of blankets & throw it on the couch. This totally works wonders!! I have learned so much from Grandma Gina's videos these past few months. I even make my own sauce/canned tomatoes now! Thank you Gma Gina, you are a blessing!!

I absolutely love Gina and her bread recipe! I highly recommend following her admonition to bless the rising bread. I forgot and it didnt turn out well at all, then the second and third time, it came out great. God bless Gina!

I just love Gina’s simple and great tasting recipes. I just made her bread recipe and it was devoured in just 2 days. Even though I save her videos I decided to buy her cookbook which I found on Amazon. I’m an Italian too and just love to hear her stories about not having much when we were growing up, I can relate to that and having to work hard in our tender years. The old saying: “what doesn’t kill you will make you stronger” is so right! And then there’s her singing, why watch a movie when we have this great entertainment! before cutting a loaf of fresh baked bread , my father would make "the sign of the cross" with a bread knife . I remember the thick slices with olive oil and garlic rubbed on . thank you for your videos!

Bless this wonderful woman's existence and love for living life! I wonder how many pounds of flour she has mixed for making bread. You can see how she worked the dough that it is second nature to create breads, I can only hope that one day it will be second nature to me. Just started watching this vlog. I am completely charmed by Gina. I am asian and cannot understand what she is singing about but I love her singing anyway. Your joy in baking and cooking is something I share and will definitely try recipes and technique. God bless you!

Thank you Gina! My Sicilian grandma made bread every Saturday and the aroma was wonderful. She always made a round pan of small rolls ~~ Nothing better than provolone & olive oil on warm rolls. Love your singing!

I love Italian culture, it shares so much in common with my Portuguese culture it's all about God, Family, & Food. I love watching these videos it brings me back to when my mom used to cook with my grandmother(Vava).

Okay - I finished my bread and rolls! I must say they are really, really good! Tastes like the bread we used to get from Toscana Bakery in Chicago before the owner retired - which we were really sad about. But, thank you Gina for your recipe! My daughter and son-in-law love the bread. This one's a keeper! Love you and your videos Gina!

Making the bread right now, we're waiting on the first proofing ...just like a my Mother and Grandmother made...my grandmother always had the Italian program on the radio in Waterbury, Connecticut when she cooked and baked..nice a nice! Gina, you gonna live a long a long a time..beautiful..😊

This is an instructive video, but especially when she gets to portioning and shaping after the first rise. (BTW - love, love, love the scissor action.) She pulls the dough into a skin, but just barely, and certainly not like a professional baker would. This is rustic baking without apologies and none are needed. She bakes on experience and instinct. The loaves formed are shaped likewise and the on rack baking technique is really inspired. She's using a very versatile dough which is illustrated when she gets to where she stretches is onto a pan and then proceeds to cut it into a fougasse shape. This is a baker of confidence and versatility. And of course she sings to us too. The best part. Cheers Gina!
