This brings back wonderful memories of my father roasting chestnuts in the oven when we were children. It seems that he just took the chestnuts from a small brown paper bag, laid them out on a large cookie sheet and heated them in the oven until they split open, but I'm sure now, watching Gina, that he must've scored them with a knife. And he was the only one who really enjoyed them. We all thought they had an interesting taste, but not something we ever grew to like. But my dad was just fine with that -- all the more for him to enjoy!! And we got our pleasure from just watching him. It was the only thing I ever remember seeing him cook!

Thank you Gina for taking me back to my childhood and i relived those joyful days. My dad used to cut chestnuts, it was his duty. My mom used to roast chestnuts on winter evenings. We would happily gather around the table. Sometimes my mom made boiled chestnuts, in Turkey we call it "tuzlama." Thanks again Gina for taking me back to the past. I make chestnuts every year. some times they have worm holes. this year I was in Chinatown San Francisco and I bought beautiful chestnuts. There are a few ways to make them. i always like to learn something new. Grazzi voi Gina. Buona natale.

Wow this brings back memories.. I remember when I was young my grandfather put the nuts in the oven and all the years he made them every year for The holidays this one year he forgot to cut the shell and those nuts popped in the oven. Good time. Great video.

The way Gina showed it is not known in Germany. We just cut off the tip of the chestnuts and toast them in the oven. In Germany chestnuts were sold a lot at the Christmas markets. Freshly roasted on charcoal grills

Ahh. Brings back such wonderful memories of sitting around the table cracking open the chestnuts and other mixed roasted nuts my nonna used to have out on the table. We would have our meal first and then break out the fennel and nuts! I can remember sitting for hours just talking and laughing with my family. Its actully funny because there in october my mom and my little sister on 27 and both my nieces the oldest is getting 5 years old dec 27 6 days after my birthday decc21 hehe, and the youngest 1 she is 1.5 years old and is the biggest princess charming hehe, well we have made this chestnut collecting as a tradition every year, were my cousin on 41 and her 2 twin girls they are 7- years old and her bonus son on 10, they come and we have made sandwish and we have warn coffee/tea for the adults and warm cacao to the kids, and then we are using 3 hours together were we collecting chestnuts, well thise are ofc the thise nornal chestnuts Aesculus hippocastanum (horse chestnuts), from about 10 at noon then when the clock is about 12(lunchtime) we are packing out some biiig warm blankets on the ground(ofc if there isnt any outdoor places were we can sit down, and then we eat our sandwish and get some hot to drink, and when we are doone, we use 1-2 hours more to collect chestnuts, and then drives home to my sister or mom, where the men have made ready, so we can make chestnut authumn/fall decorations and chestnuts animals and so on, it is just sooo cozy fun and relaxing with some quality time

Every other tutorial I've seen on roasting chestnuts makes it seem like some sort of complicated mystical alchemy. Thanks so much for taking the mystery out in favor of what I kind of knew instinctively -- it's roasting a nut but you just have to cut the shell first. I love her childhood memories, too; actually that's one of my favorite things about this channel. She's just a treasure. And her cooking ain't so bad either. Can't wait for more as the holiday season progresses.

I will definitely try your method this year to pour boiling water over chestnuts before baking and then the damp towel. Your chestnuts look delicious. Thanks for the recipe. As a child, my friend had a chestnut tree in her yard. We would take the spiny hulls off and cook them on a campfire. So sweet and tender. Thank you for your recipes and kindness. I cooked with my grandmother my whole life and now I cook with my grandsons, meatballs and sauce are the favorite. My grandsons call me Nonni. God bless you and your family.

Buon Natale Nonna Gina! I remember my Father roasting chestnuts in a what looked like an old cake pan on the stove. I'm pretty sure he soaked them but I know he used to cut a cross in them. I wish I would've known about soaking them in boiling water 43 yrs ago! I only found that out after years of trial and error. The soaking in the boiled water helps to separate the inner skin on them which can be a pain in the asino when it sticks. My dad always made these in the Fall, in Portugal. They also sold them on the street corners, like barbecued and they gave them to you in a newspaper cone. The smell of it alone was wonderful!!! HE cut them a little deeper and put sea salt from our town, kosher, the thick grain. It was delicious. If you don’t cut them they explode like bombs, just if anyone is wondering.

You are the best, Gina! Where else can we learn but from you! I have never roasted chestnuts because I have lived in South Florida my whole life! I am planning to find some now and give this a go! Can't wait to taste my first chestnut! (I'm 65). 😁
