What a great video Rose. One thing I love about your videos on both channels is that you don’t just preserve ‘ingredients’ but you are meal focused. LOL, but even if I had one and didn't need a trail meal, just having both ingredients on hand in the jars would be so nice to grab and whip up a quick meal when we come in from a long day working on the farm or just being gone all day and needing to eat. Fast pasta is very easy. Cook the pasta all the way through. Dehydrate or freeze dry it. And there you have it!

Very nice video, Pam & Jim👏 the name for Italian meat sauce is "ragù" (pron. : ragoo). The original recipe ingredients: onion, carrot, celery, ground beef meat (pork meat may be added as well), tomatoes, basil, oil, a little salt and sugar. One question: the sauce can be dried also in a basic dehydrator? and how long can it be stored? thank you so much and best wishes for your YT channels. Ciao from Italy ⛵

Thank you for your comment, Francesca! Yes, you can dry it in a dehydrator. Shelf life will vary with storage container used and the conditions of the storage area. For our dried ragu, we count on it being good for at least 5-10 years.

Pam and Jim, have you ever had a time where you reconstituted a freeze dried meal and it had a metallic taste? I've had this happen with baked beans and with lasagna. I was wondering if it could be the tomatoes. What are your thoughts?

I with I could afford a freeze drier. Many of these would work alright in my dehydrator, but the sauce turns to more like a fruit leather and won’t reconstitute as easily. I did just get a nice All American canner for my birthday. I’ve never pressure canned before, so I’m excited about that.

That is a fantastic pressure canner and you are right about there being a lot you will be able to do with your dehydrator and now with your pressure canner.

I’ve done water bath canning a few times and to be honest some “not approved recipes”. I will say all the the “not approved recipes” all have been loaded with so much vinegar I wasn’t overly concerned. I’m talking recipes where vinegar was the only liquid!! I think revisiting the thickness might be a good idea as it had raisins and chili paste, so was probably thick. The pickled turnips I made a year ago at about half vinegar I have concerns about. I may not use them.

Fascinating information - I was most taken by the fast pasta and had been wondering how to FD it when cooked. If we are not supposed to use oils/fats when freeze drying, how do you stop the pasta from clumping and sticking to each other if you are not oiling the water? Or is that amount of oil okay? I have quite alot of fresh pasta that I was about to freeze but would much prefer to cook it and FD it. i hope you see this message given that I am more than two weeks later than your posting of the video. :) xxx

I don't put oil in the water when I cook pasta and when I am going to freeze dry it, I rinse it very well and it doesn't stick.

We pre-freeze pretty much everything because it cuts down on the processing time, especiqaly when we select the "not frozen" button to start the batch.

There are a couple that I tested at our elevation that I feel safe to use for my family. The Instant Pot Max and the Nesco. Obviously I can't officially recommend them, so you will need to decide for yourself.

Hi Pam. I have a safety Question. My vacuumed sealed spaghetti sauce with meat unsealed after several weeks.It was vacuumed sealed. The lid and loose ring was in place. Should I trust it to be safe?

Yes, it is most likely OK. Just heat it to a boil for about 10 minutes to ensure safety.

If it has meat, it is not recommended for dehydrating, sadly.
