Hi Laura! This is my first time commenting. I've been watching your videos since last year. My husband started peaking in to see where I've been getting my recipes and he always mocks your "hi guys!" which I always tell him how awesome you are and I love your intro. So I watched your Italian cookies video this morning and he came in and I turned the video off and he said "no! I wanna see!" I said "I thought you thought this is goofy" and he blushed and said he loves you too, he was just having fun. I said "you just think she's cute" lol and he blushed again and he said "yeah, that too. Oh Laura, the memories of those cookies are wonderful. We share so many memories of food in our Italian childhood. I remember you talking about the grain pie, as we called it. And now this as well. I remember trays of Italian cookies, and how these cookies stood out because of the unique color. There was something special about biting into one of them. And don't get me started on Pignoli cookies, my other favorite. It is wonderful how just seeing these cookies brings back memories. But when you talk about them, I realize how so many other people have such fond memories of food, especially during Christmas and Easter. It's all about the association of those foods and families together during the holidays. As we get older those memories become sweeter. I see your eyes light up when you talk about it. So many of your fans react the same way. The food goes down quickly, but the memories can sustain us for a lifetime. Thank you..................

These are literally my favorite cookies, I even remember the first time I tried them! I live a half hour outside of New York City and when I was about 8 years old my cousins and their friends took my sister and I to Little Italy and we had these cookies in a pastry shop and I instantly fell in love. I'll definitely be making these!!!

Since from knee high to your mom...till present you have mastered cooking + baking...,your recipes are the best.I'm a chef + love being in the kitchen & cooking foods,creating? Lol towards the end...you say after the antisapated bite..."I can't describe it? and then you do-----nameing all the ingredients =almonds,apricot jam dark chocolate..... My mother alway made the same cake without the colours. We are originally from Algeria and she also used apricot jam and topped the cake with melted chocolate and put on sprinkles and let it set. We loved it as children. It brings up memories...need to have that soon.

I know the last thing you need is cooking advice, but I measure my dry ingredients out on wax paper so I can fold up the sides and get them into the mixer with no mess. My first comment to you because I have always watched on my iPad. I just want to say I couldn't love you any more than I do!!! EVERY channel of yours is wonderful! I found you by accident when I was looking up avocado toast since it was so popular on Pinterest. I LOVED your personality and I ended up binge watching every episode of LIK over 2 days. My 3 year old granddaughter would walk around the house saying "Hi guys, I'm Laura Vitale..." trying to recreate that signature happy high pitch! OMG!!! Thank you SO much for this recipe!!! I tried these for the first time at Sal & Dom's in the Bronx, NY! And I totally fell in love with them! Their recipe is a little bit different because they add 2 more layers and I believe raspberry jam too, but it's to die for!! My boyfriend and I have been looking for a recipe and videos on how to make 'em but we have failed to find one that is easy to follow. Yours looks very easy, and even though it's not the exact same cookie we had in Sal & Dom's, I'm pretty sure it'll be equally as great!! I love almond paste! In The Netherlands we call it 'amandelspijs' and we use it to fill speculaas (also known as speculoos), in our Christmas and Easter bread and in other pastries. So delicious!

Love these cookies. I made them twice. once with purple and pink for Easter. I also cut them before the chocolate goes on into strips first. i like the chocolate thinner and on the sides. I also made with mixture of raspberry and apricot instead everyone's taste is different.

Hi Laura. I have the same problem when poring my flour into the mixer. But I find that if you rotate the bowl whilst shaking the flour in, most of it will go into the bowl without spilling it every where. Great videos Laura keep it up😊😊😊 xx

Hi Laura! I am a faithful fan of your shows and really enjoy your videos. All of these hit home because my parents and family are all from Sicily and many of your recipes are what I grew up with and still eat to this day. My mother has been making the Italian Rainbow cookies for as long as I can remember and they are definitely one of my favorites! Have you tried using almond extract instead of the vanilla extract? It really enhances the almond flavoring! Anyway, thanks so much for all your amazing recipes, you are a true delight and talented baker/cook! BTW, last year I made your pumpkin roll and my friends went CRAZY over it! (So did I)

I have a question. Some recipes for these cookies say that you should whip the egg whites separately and some just put the eggs in. Usually, whipping the egg whites separately makes it lighter and fluffy, but once the cakes are cooked, they are weighted in the refrigerator overnight to make them more dense. Given the compression of the cakes, is it really necessary to whip the egg whites separately? I am curious.

A year later and I have the same question. If they're thin and flat, and pressed overnight, I don't understand the need for whipped egg whites. Perhaps it gives the batter more volume or makes it easier to spread in a pan to bake.

Looks a lot like one of our Romanian cakes called Televizor, or television. Romanians are big on layered cakes like this. They have so many extraordinary desserts, like the French. Looks good!! We call these bite size cakes, prajitura, different from tortes that are round.

my grandma used to do this when i was a kid. And i remember she was cutting them in a diamond shape. Basically diagonally one one side and then the other side. THey were amaxing
