Italian Semolina and Ricotta Cheesecake

I’m American, Italian decent, Sicilian. My Mother made this cake every Holiday. I’m not sure if it exactly the same. But we loved it. She was not only a great baker, but a natural chef too. I need to bring out her recipes, she had many. Family, my Great Aunts, Aunts, Cousins shared amongst themselves. So grateful for these memories. Joel, love watching you, best wishes ♥️♥️🙏🙏🇺🇸🇺🇸

Day after tomorrow India celebrates 'Diwali', the festival of lights. Accompanied with lots of sweets! I'll love to make something different like this irresistibly delicious and moist cheesecake. I made this delicious cake yesterday..I did only 1/2 of sugar. .and it was delicious. The only issue i had was even the cake cooked, it did not brown after 90 minutes of baking at 320 perhaps my oven is not as hot as yours..but I will make it again.
