As a Mien person, I make my kaosoy meat in large batches to freeze for later. I usually use lard to help preserve the mixture in the freezer better. Add a bit of pork skin to help thicken the mixture.

Looks really good! The Burmese also use a fermented soy bean paste in some dishes, which adds a unique umami flavor profile different from that of their fermented fish or shrimp pastes. I’m planning on traveling to Laos in November and am looking forward to trying the Lao/Mien style of khao soi when in Luang Prabang. I’m wondering if there is a different variation of khao soi particular to Phongsali perhaps reflecting some Ahka, Tai Lue or other ethnic influence? I know the Hmong from Laos have their version of khao soi (khao poon?) but haven’t been able to try it yet. Hopefully I’ll be able to sample a number of northern Lao ethnic cuisines, and learn some of their recipes/techniques to incorporate into my home Burmese & Chinese-style cooking.

you can use the fat/wide noodles for like chow fun. or any type of noodles tbh. i prefer the fat/wide ones. lol

broth can be just like pho broth. the main part of kasoy is the meat so if you dont have the fermented bean paste it will not taste right. to fix you a bowl, simply like any noodle dish.
