Bones help give meat flavor and helps cook it. It's recommended to cut the bone off and then rewrap the meat around it.

Dream Babies I agree, as a culinary artist with a 4-year culinary degree and over 15 years of experience I know that brazing the bones and using them to make a stock is one of the best flavors you can have to add to any dish. For instance sear the bones, add some fresh garlic and shallots, sautee then deglaze with red wine and you have yourself a beautiful stock. But Carl was complaining about his meat not being dibond, I was suggesting he do it himself, I can debone a chicken in less than one minute so I doubt it would take longer than 5 minutes for someone to debone a piece of beef or lamb. But I agree, the bones add tremendous flavor. You sound like you know what you are talking about. You are making me hungry, I would love to be in the kitchen cooking with someone like you right now. Have a great night. And next time you are deboning a piece of meat think about me lol. My wife is laughing at me right now for saying that LOL but what the hell I love to cook and I enjoy cooking with chefs. She just does not understand.
