注:
1.烤箱要用指定温度(这个食谱220c)预热至少15分钟再烤, 我用上下火设定,不开旋风。放中层烤。
2.别烤过头,不然上面会变很黑,就会有苦味哦。
Note:
1.oven need to be preheated at specified temperature(this recipe: 220c) for at least 15minutes before baking, I use upper lower heat, without fan force oven settings, bake in middle rack
2. don't overbake the cheesecake, or else top will become black and taste bitter.

好多人要求我做这个食谱,所以今天上传啦,就是网红的”巴斯克焦香芝士蛋糕”。做法出乎意料的容易,因为不用害怕烤焦,蛋白霜打发不好,开裂,回縮,不用水浴法。这个蛋糕本身名字就是要烤焦,才能有焦香嘛。哈哈。而且,最重要的它的口感层次真好。用高温烤至表面深可可的焦色,薄薄口感偏硬且有焦浓香味,越里面越中间口感就越顺滑柔软,溶在嘴里。芝士香味也很浓香却不甜不腻。开始变成我最喜欢的芝士蛋糕食谱了。
A lot of people requested me to make this recipe, so I uploaded it today, the viral "Basque Burnt Cheesecake". The making process is unexpectedly easy, because you don't have to be afraid of burning, the meringue won't beat well, crack, shrink, and don't even use water bath. The name of the cake itself is said to be burnt. Haha. Moreover, the most important thing is its good taste and texture. Bake at high temperature until deep brown caramelized color on top, develop a thin layer of relatively hard texture with rich caramelized flavor, the more interior and center, the smoother and softer texture it gets, melt in your mouth. The cheese flavor is also very fragrant but not sweet nor greasy. It has become my favorite cheesecake recipe so far.

=6'英寸 圆蛋糕磨具=
430克 奶油芝士
120克 细纱糖
3 大鸡蛋 (一次一颗)
3克 香草精
215克 奶油
18克 中筋面粉
1克 盐
(烤箱220C/428F: 40-45分钟)
(室温完全冷却, 冰箱冷却4小时-隔夜)

=6'inch Round Cake Tin=
430g Cream Cheese
120g Castor Sugar
3 Large Eggs (one at a time)
3g Vanilla Extract
215g Whipping Cream
18g All Purpose Flour
1g Salt
(Oven 220C/428F: 40-45minutes)
(Let Cool Completely at room temperature, Chill in Fridge for 4 hours-overnight)

I only use a maximum of 2-3 speeds. My mixer has a total of 5 level speed. Hi Wendy, I’ve made a mistake that I forgot to mix the sugar w/cream cheese 1st but I mixed the eggs w/cream cheese 1st then the sugar. Will the cake have any problems? I’m supposed to give the whole cake to a friend so I haven’t cut it to check it out yet.

哇,谢谢你,做了拍照来看。 不同烤盘尺寸,用的食谱份量不同,要上网查询cake pan converter calculator来准确调整食谱。 烤的时间其实是看面糊深度,越深就烤越久。所以你可以以我影片面糊深度来做标准。深过我的就烤久过我的。可是烤的时间也取决于自家烤箱热度。有些烤箱热度很强就烤就烤短些。最重要烤上色程度

Depends on your oven, if heat force too high or oven that can't switch off fan, need to reduce oven temperature by 10c

谢谢你喜欢,做了拍照来看噢。 你的烤箱有旋风吗?旋风做蛋糕黑得很快,要关噢。不能关下次就降低10c来烤。 如果不是旋风问题,就是你烤箱火力大,要减少一些烤的时间

What type of baking paper do you use to ensure it won't burn in oven? If don't have big oven can use Air Fryer with max 200 degree Celsius and how long need to bake? If baking tray a bit small how do we adjust proportions?

I use parchment paper, baking paper especially made for baking works too. I din use airfryer before but heard its heat force really hot, u need to adjust by yourself.. Please search online for cake pan converter calculator, n adjust recipe according to your cake pan, must be precise

Hi Wendy, I have tried this recipe many times and all my friends and family loved it. Would like to bake one for a friend who is allergic to gluten. May I know if I can replace the flour to almond flour or others?

You can replace with cornstarch

@@iwen777 I actually use almond flour and it turns out fine as well. I also added a bit of Greek yogurt and lemon zest to the whole mixture, makes it lighter : )

Depends on your cake mould size not weight ya? Please search online for cake pan converter calculator to adjust recipe accurately according to your cake mould.

以后可以上网查询cake pan converter calculator,来准确调整食谱噢, 食谱每个材料x1.78倍。 同样温度,烤的时间看你面糊深度,越深越久,越浅越短,还有看蛋糕颜色,加以调整

hi I only have a 6 inch springform pan. do I use it the same way as you did with the 2 layers of baking paper? does the whipping cream need to be at room temp or cold is ok?

Yes use the same way. Cream best to be slightly room temperature,
