There's 1 outlet in PJ that serves cod fish head noodles. The soup is not particularly nice, but the fried cod fish was crispy outside, soft inside, very nice. But over the past few years, they keep saying no cod fish, despite still listed on the menu. I stop going there anymore. I really missed having fried cod fish head in my noodles.

Long time ago traditional fish head noodle doesn't add evaporated milk because cooking the fish head itself in the soup is enough to turn the soup white. But nowadays evaporated milk is added because vendor unable to cook the soup till white-ish colour due to the amount of customer in the short amount of time. Am I right or wrong ? can someone clarify.
@malaysiafood3283 жыл бұрын
Absolutely right if the fish is fresh enough u can cook the soup to a whitish color, adding milk is a shortcut but isn't totally bad coz milk gives the sweet taste

I disagree fish head maifun started in Singapore. I have eaten at Swee Kee (Kah Soh) Singapore in the mid-80s. At that time Kah Soh wasn't an old lady yet but she was running the business and the name change came much later. This, that I am narrating, is the true origin of yue tow mai fun. The first fish head used was the sang yue - haruan or toman, found in abundance in the backwaters of bye-gone Malaya. My father, if alive would be more than a hundred years old, was a subcontractor engaged with the construction of temporary army barracks on the fringes of the Malayan jungle for the colonial government. That was in the early 50s. We were in Kuala Lipis, Raub, Jerantut, Benta, and a few other places. There were many little zhe char stalls in those small villages/towns those days. Fish head maifun was always top of the menu and every stall was offering this popular item. Cheap too. My family always ordered this delicious meal. I am sure there are some in their 70s or 80s still living in those places that I mentioned. They can confirm my story.

Thanks wong there will always be a debate between spore and msia on the origins of chicken rice, bkt and fish head noodle etc

@@malaysiafood328 I am living in Singapore and quite certain fish head vermicelli will not get caught up in a debate of who is the original for the simple reason that the early dish available here used toman fish head. Now, toman fish was popularised in the 80s and they were farmed on a large scale in Johore. I even knew the guy who imported toman fish into Singapore. Malaysians had been using wild haruan and toman since way back when.

@@tomansebarau it was initially a cantonese restaurant opened in the 30s by the immigrants from canton, closed recently
Don't bother going to Uncle Weng. Real slaughter house. I went there the a few months ago during MCO, I thought of helping them out because business weren't good. Right after MCO when business picked up, they raised the price immediately. Not only that, I added side dish of fried fish and asked what is the price, the lady boss said depends? My wife asked depends on what, don't they fix the price? Does it depend on what car we drove there and how we dress? I will never go there anymore. Unscrupulous and dishonest.
