Batter:
1 Cups Flour (around 200g)
1 Can Soda
3 Eggs
1 Tablespoons Salt
11th Secret Powder:
3 Cups Flour (around 600g)
2 Tablespoons White Pepper
2 Tablespoons Black Pepper
2 Tablespoons Paprika
2 Tablespoons Salt
1 Tablespoons Celery Salt
1/2 Tablespoons Mustard Ground
1/2 Tablespoons Garlic Ground
1/4 Tablespoons Oregano
1/4 Tablespoons Thyme
1/4 Tablespoons Basil
1/4 Tablespoons Ginger Power
Hot & Cheesy Sauce (Optional) can serve with chili sauce too
1 Cup Milk
Slightly salt
Slightly Sugar
5g flour
3-4 Slices of Cheese
1 Tablespoons Paprika
2 Tablespoons Butter
*if flour not able to mix in sauce and use colander filter
Step1: Marinate drumsticks with little salt, don't put too much because later the powder got flavor.
Step 2: Prepare the batter and powders separately with ingredients above.
Step 3: Heat the oil, and coat with the chickens as the video. First coat the drumstick with 11mix powder, shake away the excess powder.
Then dip in the batter, slightly shake & remove excess batter.
Finally, coat with the powder again, can gently press like video so got the crispy texture.
Step 4: Once oil meet temperature with medium heat (use wooden chopstick, if got bubble then right) Shake the drumsticks excess powder before you put into the oil. The time depend on your chicken size. Use medium fire cook around 9 - 12 minutes, take out and rest 1 minutes. Always remember if your chicken is defrost nicely, and starting we use around 10minutes to fry it with low medium - medium heat, the chicken definitely will cook completely.
Step 5. After that heat the oil to medium high, fry 1-2 minutes (be careful here and keep an eye, if not the chicken may burnt) This step 5 is important because can let the chicken more crispier!
Tips:
1. The fried chicken time depends on the size of the chicken. From the beginning using small medium fire. Be careful and fry the big ones for a longer time. Take out the big ones and insert them with bamboo chopsticks. If there is no blood, it means they are cooked. (Before marinate, large drumsticks also can pork with thin branches to avoid undercook.)
2. Pay attention to the possibility of celery ground (celery powder), only celery salt (celery salt) is sold in the supermarket. Then you have to pay attention to the amount of salt. Some of the garlic powder (garlic powder) also contains MSG. So pay attention to the amount of salt. You can test it after adjusting the flour. If it feels too salty, add flour. Hot & Cheesy Sauce
1 杯牛奶
少许盐
少许糖
5克 面粉
3-4 片芝士
1 汤匙辣椒粉
2 汤匙牛油
温馨提示:
下面粉时可以用过滤网,
也可以过滤网过滤掉不均匀的地方
步骤1: 清理鸡腿去干水分。并用少许盐稍微给它提前入味。不需要太多盐,因为迟点的粉也是带有咸味的。
步骤 2: 用以上的配方准备面糊和11种香料粉
步骤 3: 热一锅宽油 (多油的意思) 根据食频的方法处理鸡腿。先把鸡打上一层粉,去掉多余的粉。挂一层面糊。稍微滴干面糊。然后再次抓上一层粉。挂上最后一层分后,可以用手抓抓一下,给它的形更接近kfc的样子。
步骤 4: 油温可以用竹筷,如果有冒泡就可以了。一开始不用太大火,用中小火来炸(因为3-5分钟自然会提升去中火,放入鸡块前要要掉多余的粉。第一轮炸鸡的时间约9 -12分钟 (看鸡的大小)。时间到就去出放在铁架上滴油. 要注意油温避免炸焦。
步骤 5. 油温升高,复炸1分钟。这一步可以提高酥脆。但是要全程看着,避免烧焦。如果觉得可以就拿出。然后一样放在铁架滴油。完成。
温馨提示:
1. 炸鸡时间视鸡的大小而定。一开始就是小中火炸。一般小鸡没问题,大块的要小心并炸久一点,把大块的拿出来可以用竹筷子插入,如果没有血水就代表熟了。(大块的鸡一开始也可以用尖尖的枝插入几个地方,这样它更容易熟透)
2. 调味料的牌子其实我都是尽量买最便宜的,做出来都好吃哈哈。要注意可能celery ground(芹粉) ,超市里卖的只有celery salt (芹盐). 那你就要注意盐的分量。那些garlic powder(蒜粉) 有些也是会带味精的。所以注意盐的分量,粉那边调好后可以测试一下,如果觉得过咸就再加面粉。一定不要太咸,因为鸡腿一开始使用少许少许的盐腌过。
3. Soda水(苏打水)是一种碳酸饮料,是在经过纯化的饮用水中压入二氧化碳气体,并添加甜味剂和香料的饮料。什么牌子都行。
