Although I enjoy watching Jaques Pepin, I'm not a cook. However, I thought I'd give these a try. They weren't perfect (ratio off? didn't beat long enough?). But I tried one, and it wasn't bad. Unlike Mikey, my office will eat anything! That's where they're going.

Ah, ha! I had heard of using the whisk attachment by hand to foam up the eggs a bit to before attaching it to the mixer to help the whisk reach the eggs, but never thought to unhook it a bit to get the extra reach. I also like my meringues a bit caramlized.

I love meringues! Chewy on the outside light on the inside. My mother used to make these for our birthdays in bite sized 🥳 along with our favorite dinner of choice. (We then would do the same for her on her birthday! It took 3 of us🤣🤣)ps. Do you see name on his apron? 💔😇❤️

I used to make ‘ Easter Baskets ‘ I just before serving I would put a custard cream and one of these little yellow marshmallow chicks. They were so cute. Everyone loved them at our Easter dinner 🐣❤

KitchenAid makes a 3 qt. Bowl and Combi-Whip that fits SOME bowl-lift mixers. I have one for my Pro 600, and it's like having two mixers in one.

If you watch some so called "chef" today, they would make a big deal of making this recipe. Master Chef Peppin does it simply and does it the best.

ah, yes, they would tell you to use your hand to remove the yolk and to break the eggs into separate bowl, cause god forbid you have to fish out a piece of shell, and they'd tell you to slap avocado with a knife to remove a pit, and from what height to salt your food, cause, y'know, who'd ever figure out how to salt food

@mimosveta What? Are you a child? Your comment sounds like it came from a 3 year old. Peppin is a master chef. A traditional classically trained French chef. He has over 65 years of cooking. He was the French president's personal chef. He cooked and created state dinners for world leaders while in France. President Kennedy wanted him to be his personal chef at the White House, but he refused. Peppin was executive chef at many fine restaurants in Manhattan, NY. He and Julia Child taught America about fine food and how to prepare it. He does not host cooking game shows like Flay and Fieri. He does not host reality shows like Ramsay Kitchen Nightmares. By the way, the changes made by Ramsay were supposed to save the restaurant because of his recommendations. But they went go out of business a year or two later. Peppin does not push cookware or other products like Rachel Ray. Peppin is a TRUE chef. A master chef. The other are just cooks. Now go eat at McDonalds. That's what you consider fine food.

I just tried this for the first time. The video didn't really say how long or to what stage to mix after adding the sugar. I mixed until it looked kind of gloss. After baking I got strange bubbly, brown sugar bubbles coming out of my meringue cookies. Maybe I didn't mix the sugar and egg enough... Still really good.
