Thanks, Gopi. I miss the unfermented and fermented versions of this sap as well as the sugar made from it. In northern Sri Lanka, the palmyra palm provided not only this great stuff but every bit of the palm was used. The leaves were used as disposable, biodegradable dinner plates and drinking tumblers, for fencing and roofing. The young leaves were dried and made into containers for flour and other food and even pails for fetching water from wells. Unripe fruits are eaten as "Nongu". Ripe fruits were "cooked" and the flesh, eaten or sun-dried to make "Pannaddu" which can be stored without a fridge and eaten months later. The seeds are grown and when they are about three months old taken out of the ground and cooked and eaten or dried and eaten as "Pullukodial", or powdered and used in making "koolzh" or "puttu". The trunk of the tree is used as roof rafters. I was born in houses that had the entire roof made of the palmyra palm and done everything that I have mentioned in this comment. Our fence was made of Palmyra leaves! When the roof and fence are replaced every two years the old leaves are carted to the paddy fields and covered with sand to rot and become fertilizer. Sustainability and health with no chemicals and people lived to a hundred and many never took even a panadol!
