TheHeffs I recommend butter - it tastes better. Olive oil is good for salads. That's pretty much it. There is no reason to bother with anything else. The idea that butter promotes heart disease is an old wives tale. Cholesterol is also not a concern. Your doctor today will examine your test results for the ratio of high density lipoproteins to low density and some other tests but he won't likely bother with your cholesterol figures.

If the cooking spray has corn, soy, or canola oil in it, look up how those are made. They have to heat those oils so much that they almost turn to plastic. Hey a cheap olive oil that's just pressed. You can get ones that are pretty neutral flavored and the smoking point isn't as much of an issue as they make it out to be. Really, learn about corn oil processing, it has to be toxic. Cotton seed oil, too.

I watched a video of Julia Childs doing omelettes. She keeps the egg moving until it solidifies a bit.( a swirling motion) then adds the fillings and flip 1/2 it over wait a little and flip the whole thing. No spatula. The real trick to a good omelette is the right pan (with sloping sides). I've been doing it her way since and they usually come out great but as you say sometimes the bottom gets too brown. I'll have to try the broiler next time. Oh almost forgot a little water instead of milk makes em fluffy too.

Use water in place of diary. The water helps to steam the egg and make it super-fluffy, while milk makes it flatter; nothing more than folded scrambled eggs. This works amazingly well especially when you use a lid. Also, do a quick fry on the ham, mushrooms, onions, etc BEFORE adding the eggs. This way, the extras don't just float on the egg. The extras will be all the way through the mix making for a much better presentation.

taemoney86 Cooking With Jack Show Water does work better in eggs because it slows down the cooking process slightly and makes tiny air pockets as it evaporates. That's what makes the eggs fluffy. Milk works also because of the water content, but definitely not as well as water. You don't need much water. Maybe a tablespoon or so.

Worked at Burger King many years ago. They turn the fryers to 250 deg. Then, they have a pan that sits on top of the oil. They add buttery oil to the pan. Then they put eggs in a blender and blend them for a minute or two. Then, they pour a certain amount of eggs onto the pan and just wait until it completely solitifies. Cut them, fold them and make crossandwiches. Never burned eggs... A blender or a hand blender adds air to the eggs and makes fluffy. The broiler is an awesome idea. Thanks...
