In the restaurant business, many years ago, I learned to do bacon on a sheet pan in the oven. No curling of the bacon and no splatter. You can line the sheet pan with tin foil for ease of clean up. I do it at 350 degrees. Perfect every time !

@jeremylim123 I used Russet Potatoes. You can use any kind you want. I believe the normally used one is russet. be sure to peel it first.

@EtherBoo I try not to do seasoning because sometimes when I do, people think that's the only seasoning they can use. I will try to do more of the seasoning that I do and make mention that everyone's taste buds are different and to season with what you like.

Way back in the day they used a tool called a "Bacon Press". It was made out of Cast Iron and weighed about 2 lbs or more. Those worked wonders. Bacon came out flat and evenly cooked on both sides without having to turn it. As far as your looks? You look like Jack Scalfani to me.

Not defending the guy but I was a professional chef for 16 years. Won awards and had a lot of fun in the industry until I quit to take care of my TBI father and pursue family life with my husband. I enjoyed starbucks for many of those years. Can tell you its a matter of taste not a matter of quality. I used to go to caribou coffee where I live but made the switch after they closed down. I don't drink coffee but I started going to Caribou because they had a delicious hot apple cider. Hot apple blast it was called. When I had to switch over to Starbucks I was mighty disheartened at first because I thought it was just going to be a complete downgrade. However they treat me well, can make a mean custom drink for me. I still make all the food in my family and I don't claim to be the best out there or even great. But I do make good food in general and most around me tend to think I have a good bead on making food for them. Just sayin I wouldn't use that as a justification :).

Hey Jack! I have a question and a tip for making eggs over medium (a style my roommates love BTW). My question: if I fork the bacon and cook it on an electric griddle with it still come out flat or do I have to fry it in a pan? My tip: try using a frosting spatula, the ones with a heat-resistant silicone tip at the end, to flip your eggs over. They slide under easier and I rarely break any part of the eggs when I flip them. Thanks for another great episode!

@GottofLAN a lot of what I do like flipping eggs and using cherry tomatoes comes from how my mom raised me. Sunny side up is good, too. Most Americans each over easy or scrambled.

Just a couple of things. Why no seasoning? The hasbrowns look good visually, but they have no seasoning on them, even if something basic like salt and pepper (I like Smoked Paprika among other things), same goes for the eggs. Secondly, you can get the eggs to cook much more evenly if you crack them in a bowl first and pour them from the bowl into the pan. This prevents breaking a yolk when it's too late as well (already cooking in the pan). Good call on the bacon, did not know that!

If you don't want bacon to curl up, you gotta trick it. Put it in a cold pan and let it get hot really slow. The bacon is like "mhm yeah its getting a bit warm in here i think" and the bacon is done before it realises that there is heat. The Curling comes from too much heat applied to fast.

I saw a different way of making hash browns once just if you were interested. You start by cooking the whole potatoes (unpeeled) on a tray on rock salt in the oven for 45 minutes at 180C. then you peel them, grate them and give them a quick deep fry. I've only made them like that once and they turned out great. I suggest trying it.

there is a place i go to in kansas called stacy's resturant the hash browns that they serve. mom told me about how they make the hash browns is that they boil the potatoes then freeze the potatoes then defrosted them then they shredded them then cooked them of course

I see you shop at Costco. I admit, I am a bacon hater... but, sometimes I scorch it i the pan just to use the grease to cook eggs. I use cooking spray and butter, we don't use non-stick pans so the way a pan is lubricated becomes very important.

@jakatak69: NYC banned garbage disposals because they put alot of stress on the water supply. It takes more money to separate the garbage from the water. If you have body waste and food garbage, the sewer price and what they charge for water will go up. The general rule is anything that is left on your plate after you scrape it and other particles are okay. Skins, shells, etc belong in the trash.
