Literally the worst dried meat in Europe are made in Spain, you want good Ham take Jambon Cru from France like Bayonne or Auvergne as it's the best climate to make it and doesn't need to be put in plastic as it will make it greasy and go bad really easily and the animals are not fed corn, no antibiotics and carcinogenic additives.

Main difference is Spain vs Italy. Jamon is from Spain, having different types depending on the pig and it’s diet. Prosciutto is Italian, and amongst its common variety can be more affordable than Jamon, even in its flavor they are pretty different.

Unless you dad used to abuse you and you became a vegan prick, that is the only way you would not be able to appreciate such product and dedication. If a good jamón is cut well you can notice the fat invested melting on your mouth, even he piece should feel greasy on the hand just by your body heat. The salty flavour goes great with a light beer (butt light if you have issues, a real one for normal people) olives, toasted bread and red wine (bottled and with cork, not boxed for cat ladies and vegans)

​@@michealknight3776 if it's a delicacy, high quality piece, like the one you see in the video, you usually eat it on its own in small pieces. There might be some side dishes like good cheese and some wine. If you're not eating the fancy shmancy kind... well you can make a sandwich with it; fry it and use it as a garnish for sardines or similar fish; wrap some melon with the jamón; put it over bread with some olive oil... there's a lot of ways and sometimes depending on what region of Spain you're in, people eat it different ways. Regarding taste, it's usually salty (the cheap one specially). Higher quality jamón is not as salty, more subtle.

I worked at a restaurant where a Pata Negra Jamon was purchased. I was ordered to trim all the fat from the Jamon to about an eighth inch thick left on the Jamon. If you can't tell the difference between The real Iberico ham and other types of Serrano, you need a pallet check. The distinct nutty flavour is so intense and rich, better than any other type of meat in the world imo. While Wagyu has a rich taste and is very tender, it pales in comparison to true ham from black bigs around Bilbao fed exclusively Acorn nuts (I know its comparing apples to pears, but if you are talking about what is worth it's price, I'd say Wagyu is overpriced in comparison).

that's the way to cut it....if you want to serve barely all the "Pernil" in one raw....like weddings or big events. If yu are cutting a little bit some times a week to make a sandwich or something or to invite friends, you better keep all that fat and "ranced" surface because that's what "protect the entire piece and avoid it to dry too fast. ALSO , NEVER THROW THE FAT AWAY!! re-use it on soups, to cook, to fry, let it rance and then make a very good and loaded "Ollada" or "Escudella" or "Carn d'olla" or "Bullinada" you can use that fat to make your carbonara sauce better.
