Raymond and I always watch your videos together Faye, his late mom was Jamaican and a great cook. You remind us of her and she was the type that would have said "nice colour like me" too!!!! He's the cook and I'm the baker so I'm going to make this for breakfast tomorrow. Maybe serve it with a dollop of whipped cream and a Mango Mimosa. Thanks, FAYE we love you!!

That bread looked so good. When I was a child growing up my North Carolinian mother used to make a molasses cake like her mother used to make. Coincidentally enough, she used the same ingredients. The molasses, nutmeg, allspice, cinnamon and cloves have their own strong, distinct flavor which drowns out the ginger powder, so i never understood why this recipe was called gingerbread. I've made gingerbread but also add grated ginger, which you did mention, and sometimes finely chopped candied ginger to make the taste more authentic. Either name it's delicious!

330g flour, 250ml water and 175g molasses. The recipe is on their website and is super easy to follow :)

Can anyone explain why you use both baking powder and baking soda in this recipe? My understanding is that they do much the same thing except baking soda requires an acid to be added whereas baking powder includes an acid (and I can't see any acid in this recipe). Also, why use plain flour if adding baking powder and salt, doesn't that just make it self raising flour? Appreciate any responses, thanks in advance.

Plain flour+baking powder= a risen cake Baking soda added to the mixture= a lighter and softer texture Salt= an ingredient that brings out the flavour of all of the spices added to the cake. I hope this helps.
