Hey foodies when I'm cooking for family I often just eyeball instead of measuring. However, I have developed and tested a recipe for you guys to use. The details can be found below. Please remember that if you want a thicker fritter use less water and pour a heaped spoonful into the pan. If you want a thinner fritter use less flour and use the spoon SPREAD out the batter once you drop it in the pan. ENJOY!!
INGREDIENTS:
1/2 lb salted codfish*
1 onion, diced finely
Some sweet peppers, diced finely
3 stalks scallion, sliced
1 tsp black pepper
1 3/4 cup Water(more or less)
2 1/2 cups all-purpose flour (more or less)
1/2 tsp baking powder
Canola oil
2 garlic cloves, sliced
1/2 tsp diced scotch bonnet pepper
Other optional additions:
Annatto
Curry Powder
Onion powder
Garlic powder
Garlic
Minced thyme
Green seasoning
Tomato
*Saltfish can be boiled for 10 - 15 minutes to rehydrate and remove excess salt

This is exactly how my mom made our fritters thin and golden like these in the video. I only knew about the big puffy fritters when I bought them at the restaurants, and i didn't like them. These are the best!

These frittaz look so good! Can't watch you on an empty stomach.😂 I grew up eating them like this, thin and crispy. But we usually only put the saltfish, scotch bonnet, thyme, scallion and seasoning in there. Depending on who makes it, the oil had garlic and/or pimento. I like your addition of peppers and onions. I know this was good! Thanks for sharing.❤

Love ur verbiage. Thanx for focusing on the point without the usual drawn out chit chat. Appreciate the suggested options and the tone of your voice. Yeh man you can do it. To get it thick just use a bit less water and don't SPREAD it out when you drop it in the pan so it can have that thickness/fluffiness she likes.

I love it but you can leave it out and use white pepper or minced scotchbonnet

I think you forgot to say how long to boil salt fish Initially

You may boil it for about 10 - 15 minutes. Then drain and taste for salt and boil again if necessary to remove more salt

I'm not sure. Perhaps the batter was mixed too much or cooked for too long. It's hard to tell because I didn't see the steps you took
