Hey foodies! Seasoned rice is one of those one pot meals that we love because you can use a bunch of ingredients to create a pot of deliciousness. It can be done in so many different ways! Hope you'll enjoy my recipe. Thanks for stopping by and please remember to like, share and subscribe 😃
INGREDIENTS:
1/2 lb salted codfish (use more if you have it. I was just finishing up my last piece 😀)
1/2 - 1 tbsp coconut oil
5 stalks scallion, diced
3 cloves garlic, chopped
2 cups diced pumpkin(I used less in the video because I only had a little bit I'm trying to pinch😄)
2 cups diced carrot
a few pieces minced red sweet pepper or tomato
1 tbsp or more green seasoning (link to recipe below)
A few allspice berries
black pepper as desired
1 3/4 cup coconut milk
3/4 cup water
4-5 sprigs fresh thyme
2 scotch bonnet peppers (I love brown or purple but if that's not available use green or yellow)
Some Maggi allpurpose seasoning or Some of a Grace noodle Soup pack (minus the noodles) Remember to taste the liquid and the saltfish before you add the amount needed. These seasonings come with plenty salt.
2 - 3 tbsp butter
2 cups long grain rice, rinsed at least twice
2 cups PRECOOKED Ackee (You may add the ackee when sauteeing the saltfish or add it to the liquid like I did. The only difference is that my ackee won't be completely mushy because I add it last minute but either way tastes yummy)
YIELD: 2 - 3 servings
COOKING DURATION: The rice is simmered in a pot covered with tightly fitted cover, over medium heat for 20 minutes.
