Seasoned Ackee Rice || Simple One Pot Meal

3 cups rice
1 and 3/4 cup coconut milk ( I used homemade but you can used canned)
1 and 1/2 cup water
1 canned (19 oz) Ackee ( Drain liquid and rinse Ackee)
1/2 onion
3 cloves garlic
2 stalks scallion
1/4 bell pepper (I used red and green)
1/4 medium calabaza pumpkin cut into small cubes ( roughly 1 and 1/4 cup)
Few sprigs thyme
1 whole scotch bonnet pepper
All purpose seasoning and salt to taste
1 tbsp unrefined coconut oil or oil of your choice

I looked so good I drove 34 miles one way today when I seen this to get some from a great jamaican restaurant..the rice & curry chicken. it smelled so good that I pulled into Walmart and eat as I watch the rain come down. The best of 7hour round trip I've had in a long time... it tasted great...

This is vegan food. No meat whatsoever! Also, it has nothing to do with chicken. It's ackee rice! Jamaica's national dish without the salt fish. Plant based doesn't include curry chicken, fish, beef, steak, lamb, shrimp, crabs, worms, cockroaches, or dogs. No diary products, or eggs! Her foods are all plant based.

You have to find a substitute for foil paper and all aluminum products because foil and aluminum products cause Alzheimer's. But the food looks delicious. I will cook this for my wife but i will use quinoa instead of rice.
