3 cups rice
1 and 3/4 cup coconut milk ( I used homemade but you can used canned)
1 and 1/2 cup water
1 canned (19 oz) Ackee ( Drain liquid and rinse Ackee)
1/2 onion
3 cloves garlic
2 stalks scallion
1/4 bell pepper (I used red and green)
1/4 medium calabaza pumpkin cut into small cubes ( roughly 1 and 1/4 cup)
Few sprigs thyme
1 whole scotch bonnet pepper
All purpose seasoning and salt to taste
1 tbsp unrefined coconut oil or oil of your choice
