You can get pork belly with bones, it's the side bottom of the ribs and it makes the meat taste even better with the bone juices in there... BUT HE DIDN'T USE PORK BELLY WITH THE BONES! I have no clue why he said that unless he thought it was the bone-in belly cut but whoever got his ingredients for him fucked up and got the boneless cut instead.

My culture eats rice everyday, I switched to brown rice to be “healthier” when I developed kidney stones. Even as a white American, I see what Jamie Oliver makes and I get pissed. I was raised by a chef, my dad and he is one of those who taught me to cook using the ingredients from where the dish is from. I have formed friendships with people who work at all those little ethnic markets where I live since I am in those stores more often than the regular supermarket. There’s one near me which is an Asian market run by a family. They know me by name and if I ask them about a dish I’m making, they will direct me to the correct ingredients. The mother who runs it always says that if I have leftovers, then I didn’t do the dish right.

The throwing miso paste in the start already let me know where this is heading. Ramen shops just make one rich unsalted broth. They add salt, soy sauce or miso paste to it when you order. Adding the miso paste at the beginning is like adding ketchup on every hotdog so no one can customize it. Ramen is so simple you can make 1 vat of soup and sell it on a cart. How is it so hard?

Soba is really easy to overcook. Most people cook them perfect and shock it with cold water and eat it cold. In hot soup, even if you cook it perfect, it would be mush as you continue to eat. People dip soba in soup if they want to eat it hot. This is a disaster on a fundamental level. Soba (buckwheat noodles) is something the poor created when they can't afford the wheat for noodles. it's fragility and shortcomings as a noodles were accounted for with how it is served. You can't just substitute a noodle with soba. The dish probably would still taste good if the ramen was udon or whatever. soba is the worst choice and deserved to be roasted.

If anyone is a fan of Japanese food, there is a acronym for the order in which you add essential ingredients. さ (sa) for 砂糖 (sato) or sugar し (shi) for 塩 (shio) or salt す (su) for 酢 (su) or vinegar せ (se) for 醬油 (shoyu) or soy sauce そ (so) for 味噌 (miso)
