As a home cook, I wonder how a professional celebrity chef can screw something this simple up this badly. I feel like as these guys get successful and celebrated, they stop learning. They've started being told they're right all the time so why bother checking or gaining new information? They just do it how they think it's done, and "improve" things they think need improving, and then publish it as if they're an authority on it. There's an inability to admit not being perfect that prevents them from learning, and also results in stuff like Ramsey's shitty grilled cheese.

To be fair he said its HIS KIND of butter chicken and that is okay. I only have a problem with his recipes say its traditional and he screws it up. Cooking is fun because youre allowed to have your own takes with it, I absolutely hate it when people are so rigid about the recipe of their cultures food. To be honest, adding ketchup would have been more authentic than mango chutney. Adding cream is traditional though, but Uncle Roger is right about the butter and about everything else. One of the main flavours, dried fenugreek leaves, is missing. This is so far from a butter chicken that Jamie should have just called it "chicken in Indian inspired tomato sauce".

Heck this recipe might even taste alright, but not putting any butter in...? It's in the name of the dish. It's a lot like the time I went to a "mexican" restaurant in western Washington state and ordered Chili Relleno and was given an omelette with a few pieces of diced green chili in it. It's in the frelling name, Chili Relleno= chili stuffed/filled. Augh Then a couple weeks later I had a different restaurant at least inform me they do their Chili Rellenos "omelette-style" and was I ok with that? The Hell?

I'm a foodie/epicure, so I know these nuances too.. When you respect the food, research the food, and eat the food, you get to know these things. To be fair, my dad's a retired Mediterranean chef, and my entire family are foodies (we used to watch Food Network often as kids, lol.) I love trying foods from different cultures and cuisines. But yeah, I too was impressed by Uncle Roger's wide range of food knowledge, he's truly a man of culture.

As an Indian Chef i have to say that there are many ways of making Butter Chicken but this is not. He roasted the tomatoes (WHY?) and also didnt blend/puree it. Also what the fuck is cashew butter ?? (is it like peanut butter or something?) Makhani Gravy is made with tomatoes and Cashew in a 10:1 ratio and charring the tomatoes isnt needed, you can just boil tomatoes and cashew together and blend it.(If you dont have access to cashew for some reason or too expensive you can just use melon seeds also known as magaz or a blend of cashew and melon seeds, gotta save money first ) The gravy is then cooked by adding water and slow cooked for a long time this is what brings flavor to the gravy.(in restaurants these gravies are cooked for hours and then stored) For those making a small batch at home and want more flavor add tomatoes,cashew,garlic,corianderstalk,whole garam masala,green chillies whole, garlic and onion if you want to a pan fry with ghee and fry until the tomato starts to melt/wilt (idk the term in english) then add water and boil it well, then blend and cook the gravy in a kadhai(indian wok) UNTIL THE GRAVY RELEASES ITS OIL!!!!!!! Enough about Makhani His marinade is also questionable Garam Masala isnt really used in marinate of butter chicken, he didnt use mustard oil in marination too(MUSTARD OIL IS REQUIED IN ALMOST ALL OF INDIAN MARINATES THE EXCEPTIONS BEING WHITE MARINATE) NO RED CHILLI POWDER IN THE MARINATE??? (BUTTER CHICKEN TYPICALLY REQUIRES THE TANDOORI MARINATE SO RED CHILLI POWDER IS A MUST) Also HUNG CURD IS USED FOR THIS CHICKEN but ill let it slide, just felt like mentioning this. Also shallow frying isnt too bad, BUT HE OVERCOOKED IT IN THIS CASE. (just use oven if no tandoor or grill) YOU CAN ALSO SHALLOW FRY IT AND ROAST IT ON FLAME FOR A MINUTE OR TWO WITH A BRUSHING OF GHEE (WILL TASTE LIKE IT CAME OUT OF A TANDOOR) ) ALSO NEED TO MENTION THAT IF THE GRAVY IS WELL COOKED IT WILL BE SWEET ON ITS OWN (OR A PINCH OF SUGAR IF NECESSARY "A PINCH") Butter also goes with the dish towards the end along with dried fenugreek(KASTHURI METHI) and green chillies chopped> ( ADD BUTTER TO A LADLE OVER GAS AND ADD GREEN CHILLIES AND FENUGREEK AND FRY THEM FOR A FEW SECONDS BEFORE PUTTING IT ON THE DISH THIS IS KNOWN AS TADKA OR TEMPERING. CREAM used at the end isnt wrong tho. TL;DR: HIS RECIPE SUCKS, DONT TRY IT. Also ZAMN this reads like a copypasta. EDIT: OH MY GOD HE ADDED MANGO CHUTNEY 💀💀💀💀

Cashew butter is basically just peanut butter with cashews. Roasted cashew and maybe a bit of oil and salt and then blended. Not as bad as some of the other ingredients he's added but why not just use regular cashews?

This is the biggest difference between Jamie and top chefs, the best chefs in the world may make minor changes to put their stamp on things but they will always respect the essence, traditions and history of the origin for the food they are making

Yeah if he’d called this ‘grilled chicken in a curry sauce’ it wouldn’t be as terrible. But the fact that he tried to call it butter chicken... and changed almost every aspect of what makes something bigger chicken. Mind blowing. Also he tried to claim he was making a ‘simple weeknight’ version of butter chicken and then did over the top shit like roasting whole tomatoes instead of just using tinned tomatoes like almost all Indian curries do... how is this a simplified version?

I had an ex Regional Safety Manager who's a Scots and an ex Project Manager who's Irish whose favourite Malay dishes were soto ayam (with lots of chili!!), spicy rendang and lemak cili padi...and a lot of my British ex rigs inspectors just love working in Indonesia because of the food!!...

@@seliamila1005 I too do live here in the UK and I wil agree that alot of foods here are usually not so spicy until and unless you ask the restaurant waiters or owners to add in more spice because it's usually a way of running things professionally and won't blame em. However even in Indian restaurants I really do get disappointed on the low spice as especially North Indian foods are known to be spicy and it's only because of how hot the food is the spice usually kicks in as a catalyst to increase the intensity of the spices.

True. People add weird condiments on their food all the time. I think Nature's Valley Ranch JUST realized that some ppl enjoy dipping their pizza in ranch dressing. Does that mean Italian restaurants should add a couple spoonfuls of ranch dressing in their red sauce? Definitely no.
