As a Thai who live in the UK for over 10years, I have eaten so many fusion or adapted version of the Thai green curry to suit the Brits palate/preferences, which mostly they will maintain more or less the point of being Thai green curry however this Jamie’s version have completely ZERO context of it. I understand that his show is for quick cooking purpose but honestly he could just brought a jar of green curry paste (since he love buying the random chili jam anyway). This literally available in majority chain supermarkets, and go from there with coconut milk, meats, his own flavor etc. It will be at least “quick” and closer to the word “Thai green curry” which perfectly fit for his show. For my best constructive opinion for this dish, please change title to ‘A stir fried chicken mushroom with herbs inspired by somewhere in Asia’, your sincerely. X

Real Thai green curry use these base: (I'm thai btw) 2 tbsp green bird chilli (thais use a handfull) whole clove of garlic peeled one big thumb-size galangal (It doesn't taste like ginger, please use galangal) 2-3 coriander root (clean them by using knife to scratch the dirt out and slice them finely) kaffirlime rind (1 fruit only if u use leaves use 4-5 leaves) 1 big shallot / 2-3 for small size 2 sprigs of lemongrass (use halfway from buttom part slice up!!) teaspoon of shrimp paste (if u cannot find it don't use. it's okay) 1 tsp roasted cumin seeds 1 tsp roasted coriander seeds pinch of salt use pestle and mortal to mash them up big difference from food processor plus u get ur biceps working ;)

Jamie, honestly you have to remove the word "Thai" out of your food title. It might have a good taste but IT CAN'T BE CALLED as THAI green curry. There are wrong more than 90% of what you did. Jamie, there are so many clip video teach to cook Thai green curry, take time to learn some before you will do something like this. For a long time in your life since you was young, I've seen some video of cooking Thai green curry when you was young, too. Why you've never learned to do right. If you want to put the title of any food you teach other people as the Nation food for example Thai green curry, you have to respect to teach the right recipe, you have to respect your audiences by LEARNING to GET KNOWLEDGE ENOUGH to teach the other Nation food. You audiences will think what you teach are right. Tom Yum is really delicious. A combination of creamified by the coconut milk(not really creamy, but more of smooth, I can't define it), sour, spicy, rich in flavor. The soup has a lots of flavor in it.
