These are so wonderful. I live in Sacrmento, CA where you can find blintzes nowhere. Also, when I tried to make crepes it was a disaster until I learned the science of blintze. Thank you so much.

My two favorites are the "bagel blintz" which is cream cheese, chopped smoked salmon, chopped red onion, and capers. The other is the "russian classic" tvarog (farmers cheese will work) salt, lemon, dil, and chopped cucumber. YUM!

My favorite is a cheese blintz topped with cherry preserves. I've never made them though, only the frozen cheese blintzes in the kosher section at the store. Might have to give it a try!

I mix the crepe ingredients the day before. No need to strain. Also I’ll make extra crepes and stack on plate without any parchment or wax paper between. Never had a problem separating. I like the folding technique.

Ricotta and mascarpone with pureed yacon filling is very good. Yacon tastes like apples, but contains inulin, the same enzyme that makes pineapple safe to eat for those with diabetes.

The lady down the street always made fruit and veggie platters of blintzes served with thinned sour cream and home made apple sauce. Those and Buster Keaton out back under the stars. One of the best memories ever. Her pan was a lot smaller than the one in your video.

Never had a blintz, but If I were gonna make one, I think it would have to be a banana split blintz. That's right: split half a banana and lay the pieces on a blintz, add three little scoops of chocolate, vanilla and strawberry ice cream, then roll up the blintz and top with whipped cream, caramel sauce, nuts and a maraschino cherry.
