I made French onion soup, but without the bread, cheese and fresh herbs as I didn't have any of these to hand and a bit expensive to buy all. Had oatcakes and grated parmesan cheese with it Added some Brewdog IPA to it. Still, it came out very well and tasted delicious. It's definitely a good one to make.

The alcohol cooks out, you just use the beer to deglaze and for a bit of flavor :) You can use alcohol free beer, and also you can deglaze with water/stock if you really want to avoid beer altogether. I've seen some people suggest apple cider, citrus juices and vinegar as alternatives too.

any liquid except bleach or ammonia. You could use water but why waste the flavor-opportunity to deglaze with a flavorless liquid? Use stock, or a vinegar, or even some fruit juice. Living in the desert as I do, I normally use a chili purée.
