I ate the blue ramen last year in Tokyo, its the ramen shop close to Shibuya station I believe. It was really good, I enjoyed it a lot, at the beginning the color may put you off, but after the first bite, I started eating it non stop. I believe it is chicken based broth. I recommend it for sure.

Love the show and Shizuka's energy. I find thr blue off-putting though, and find the lemon ramen more interesting. I'd worry about getting blue soup on my clothes, or thr blue staining my teeth or something. I guess they are going for the gram. Maybe replace the lemon slices by zesting the lemon in sheets, peeling thr lemon, and then slicing the peeled lemon. That way you get the lemon and the essential oils from the zest without having to wonder when you need to fish the existing bitter slices out of the soup. Or, lemon supremes! Thanks for the episode!

Yes.... It's very off putting. The fact the owner basically confirmed it's not even natural food colouring is a completely deal breaker for me. Also how the egg was coloured in blue was also a warning sign. I dunno, I just don't even find the colour appealing especially for hot savoury meal.

Secret to the color is spirulina, so it adds a bunch of antioxidants and a slight floral note to the broth, as well as a smidge of bitterness...and the chicken is sous vide chashu ;)

Go to the spice isle in your grocery store. Right next to the vanilla extract and Dried herbs you will find a box with 4 bottles of food coloring (yellow, red, green, blue). Buy that and put a nice glug of the blue in whatever chicken based soup noodles you like. Also, don't be too shocked when you have a "bonus visit" of that blue food coloring in 12-24 hours.

that blue soup has to be a mind tease to the max. All my life my brain associates a blue like that with blue raspberry Kool-Aid or icy-pops. To get chicken soup from that color would probably make my brain scramble. I'd have to close my eyes each bite.

I'm 99% sure that the "blue secret" is butterfly pea flower tea/extract. Its a cheap and easy to obtain herbal tea of dried butterfly pea flowers. It doesn't taste good by itself at all but it gives a very vibrant blue color to liquid that can turn quickly into a vibrant magenta/pink color upon the application of a lemon or citric acid of some sort. Anytime you see a "natural blue lemonade" or something, its butterfly pea flower tea mixed with lemonade, and don't expect it to taste good, it just looks fun.

Many considered ramen a working men's staple food, it is more than that! It is the holy trinity of broth, ramen and toppings combined! The topping can be veg, meat and even fruits(lemon and peach)! And so it is the perfect meal since you have carbs, protein, veg, soup and maybe even dairy(cheese) all in a bowl of happiness! My absolute favourite food, ramen! Love it more than pizza, love it more than rice with toppings! 😍

The blue colouring actually has a very natural source and can be found on a lot of Southeast Asian food. From cakes to rice to tea. Not gonna spoil the secret here, but it's actually not that big a secret.
