Japanese Cotton Sponge Cake: Ingredients: 6 eggs 60g butter 100ml milk 60g plain flour 20g corn flour 1/4 tsp salt 90g caster sugar optional: vanilla extract Equipment: square cake (18cm (7 in)) parchment paper. mixer. mixing bowls. spatula. Recipe: seperate 5 egg yolks from their whites. put the yolks in a different bowl. add one egg (with white) to the egg yolk bowl. put 60g of butter and 100ml milk in a bowl and mix over bowl of hot water until well blended. add 60g of plain flour and 20g of corn flour to the butter & milk mixture (optional: add a few drops of vanilla extract). after mixing, add one egg yolk then mix it in. repeat this process until all the egg yolks are mixed. whip the egg whites until it’s bubbly and white. add 1/4 tsp of salt. add 90g caster sugar in 3 batches. mix until whipped frosting textured. add 1/3 of the egg white mixture to the butter & milk mixture and mix. pour this mixture into the remaining egg white mixture and mix it it all together. stir the final mixture with a spatula. line your smaller cake tin with parchment paper. place smaller tin into the larger tin. pour your batter into the smaller cake tin. gently tap against table to remove bubbles. smooth out the batter with spatula. place in large tray. put tray into the oven. pour water into the tray. bake at 150°C (302°F) for 90 mins. remove the cake from the mould immediately after it’s baked. set aside and leave to cool. add frosting or sugar on top or leave it as is. enjoy! edit: omg i just came back to this comment after an entire year im so glad i could help u guys! i hope all your cakes came out great

I made that recipe with chocolate and some walnut and wooovv that was amazing. If you want to to that with that ingredients add melted chocolate after the butter and milk mix just before the flour then start to add flour. And walnut after everything mixed, just as a final step. And do not forget to roast the walnuts before adding it.

@@raisakauser5492I think it's very important, especially for creamy, soft, moist, fluffy deserts. The cotton cake has to be fluffy and jiggly so the water bath keep the cake moist, prevent it from drying out. Evaporation distributes heat around the cake, prevent the outside of the cake from burning, cracking or splitting before the inside is fully cooked. Although cracking or not also depends on how you mix the ingredients

For people in the United States, "corn flour" is the same thing as corn starch. 150 degrees Celsius is 300 degrees Fahrenheit. This looks really good, I think I'll be attempting to make this in a day or two. It also looks like it might be nice for a 'strawberry shortcake' base.

seperate 5 egg yolk from their white. put them in different bowls. add one whole egg to the egg yolk bowl. mix 60gr of butter with 100ml milk. add 60gr flour and 20gr corn flour (I'd add vanilla too). after mixing them add egg yolks one by one and mix. whip the egg whites. add a little salt. then add 90gr sugar in 3 batches. take 1/3rd of the fluffy cloud mixture and mix it with the batter slowly then put the mixture into the cloud mix and stir slowly then put it in a 18cm² cake tin, even the surface. put it in a water filled oven tray and bake at 150°C for 90 min . . . I wrote this for myself because my pc is shitty and needs to be restarted after stopping and playing a video for 5-6 times. Like it if it's useful for you too

I usually crack the egg on a separate small bowl BEFORE joining it with the others! This clever trick is useful in case you find out of the eggs one bad one... And therefore having to throw away all of them because of one bad one fallen in with all the others!

Commercial store bought eggs don't last usually more than 3 weeks in the refrigerator. So if you keep store bought eggs in your fridge for a long long time then you can have bad eggs. but someone who cooks a lot and shops a lot will not have this problem and someone who buys farm fresh eggs that have not been washed should never have this issue. Especially if you know the person you buy eggs from.

Thank you Ms Kwa for sharing this recipe and video. For many years, I’ve tried various recipes for sponge cakes but they never turn out successful. Therefore when I tried your recipe for the first time yesterday, I started out with minimal expectation. I was in for a great and pleasant surprise though. Not only did the Japanese Cotton Sponge turn out perfect, it is also one of the softest, fine textured, springy-est and comforting sponge cake I’ve ever eaten. @sascha s It took me about 10 minutes of whisking the egg whites to get to the consistency of hard peaks. You have to be patient during this step. Make sure it is purely the whites and ensure that the bowl is free of any oily surface. The amount of water I used is about 1/4 the height of the baking tin. But that is because I’m using a very large tray. Please adjust the amount of water to the size of your tray. It’s okay to use more water as this baking technique is more like a steaming process, and the time taken is 90 minutes, which is quite an unusually long time. I hope you try baking again, as the results is most satisfying. Hope my comments help you. Good luck.

sascha s You’re most welcome. You are correct. The flame should be from both upper and lower heater. Remember to set it at 150 Celsius.The baking tray position should be in the middle of the oven or slightly higher just a bit from middle. Not too high or the top will get burned again. I preheated my oven while preparing the ingredients too.

Tried the cake, it came out perfect , however it tasted a lot like egg. I think next time I will add vanilla and more sugar. But thank u for the recipe it was well detailed

The top part was fluffy but the bottom part was a thick layer of pudding. I think because u say to keep the tins in tray with water. It gets steamed & boiled like pudding. I added one tsp baking powder too & vanilla not mentioned in ur video.

This worked after trying 3 times and getting a flat cake. The cake tastes like eating a cloud made of candy fluff with a mild hint of egg somewhere. Preheat the oven and I had to add a bit more flour, and beat the egg whites for much longer until firm.

Guys, I'm sure you all have an inner beauty. A sweet personality is much more valuable than a pretty face. For example (btw i use this example whenever I'm explaining beauty) .... ''Would you rather have an attractive looking cookie that could stun even professional bakers, but when you eat it you wish you could throw it up twice? Or a cookie that looks like something you might get out of a dumpster, but will taste so good that it will leave you wanting more forever?'' This is an example inner and outer beauty... Of course there aren't just 'cookies' (or people) who have to be just within those boundaries, there are beautiful and kind people, just as there are mean and plain looking people. Hi Katherine. I am glad you have baked this so antic spanish recipe from the XVI century that you call cotton cake or Kasutera. Its name in Spain is " Cuartos" and it is very dificult to find it , but there is a place in Mallorca ( Balearic Islands) where you can eat It. It is a Lost recipe. Thanks for remind me It.

You can find these sponge cakes in every Chinese bakery. I used to beg my grandparents to buy it when I was little. I haven’t eaten this in years. I really miss eating them.

Made those today.. is delicious but I would add more sugar next time. Also mine didn't rise as much as shown here..why is this? In my oven at 150 degrees fan it cooked in an hour..should I have left it in anyway to rise more? Thanks
