If you're referring to his second comment: "child says a toast", it's still fine to say child instead of: "she says a toast to his mother". btw in that context it should be SHE and not "her". Dumbass. Either way, it's fine to say "child" because the only person you can see in the video is the chef and the food he's cooking. Saying: "her/she" can refer to any female including women or children and people may not know who he's talking about among all the voices in the restaurant. Whereas saying "child" makes it much easier to point out that he's talking about the kid.

Yōjinbō 用心棒 OP literally said “Child says a toast to HIS mother in Japanese.” So I’m not entirely sure what point you’re trying to make, but if OP is going to be saying “child” instead of specific pronouns, then they should stick with it instead of using “his” at the end. This okonomiyaki batter looks as if this restaurant altered it to puff up like those pancake soufflés. Looks a lot more fluffier and denser then regular okonomiyaki. Yum 👌🏻

It can also have to do with whether you add things like a mountain yam or corn flower to the batter. Plus he doesn't pat it down, he fluffs it up then puts a lid on it so that the inside steams better.

i just leant to make okonomiyaki at home it was a challenge it turned nicely I had to boil the egg noodles first to soften it before put it on the okonomiyaki mixture on the pan
