Oh, I can only imagine! The sweet, nutty aroma of freshly harvested pistachios must be incredible. It’s probably the kind of smell that makes you want to snack all day! If only we could bottle that scent, right? 😄 What would you do if you could work in a place like that?

Dried without heating or freezing, allegedly at room temperature? The dryer creates a vacuum in the chamber to lower the boiling point of water and uses microwaves to heat the lemons to approximately 55-60°C. This avoids burning and darkening the color too much (after powdering, the albedo's whiteness helps retain the overall light yellow color), keeping the maximum temperature below the threshold of thermal degradation of nutrients. I believe the residual moisture is under 2-3% for powdering. So why is it called room-temperature drying?

4:00 The slicing machine could have some tubing and a hopper on top of it so all four intakes can be used at once. The worker would also have an easier time using it since they would not need to always press on the top lemon to ensure the blade hits the stack. The hopper could also have doors to close the intakes when the transfer bin is nearly full.

So much can be done to automate this factory. I was thinking what a waste that the other blades are spinning around doing nothing. Also they need a packing machine for the sticks, this is so medieval, like they haven't changed the process since the factory opened in the 50's or something.

Себестоимость такого пакетика это: стоимость Лимонов, зарплаты работников всех рангов, амортизация такого дорогого оборудования, упаковочный материал, спецодежда и средства санитарной безопасности,... И плюс заложеная прибыль. 😨😨😨 И это ещё до торговли. Не проще ли купить лимон...

Stickers are used for tracking, sourcing, if there was a problem with the batch, they can even tell which grower they got it from. These will be replaced with laser etching soon.

일본 가쓰오부시 공장 영상 보고 다음에 이거 떠서 보는 중인데 진짜 위생수준 차이 어마어마하네요.... 진짜 이게 위생이고 식품취급하는 곳이지... 아무리 열처리, 건조한다고 하더라도 주위환경수준이 이래야지..... 진짜 HACCP이 괜히 있는게 아니구나 싶네요...

Can't, it's the law everywhere. The sticker tells you where it's from, what type of lemon it is, the grower, etc. It is all in the number on the sticker. These are going to be replaced with laser etching soon, so those guys will be out of a boring, mundane job soon.
