Absolutely love the dignity of the presentation and that of the consumer. A touch of salt... a few drops of lime. A bit of fresh wasabi, gentle dip into some soy. Respect for the food, the chef, the experience. Reverence for the dish.

Knife is sharp as heck. I think the crab was already boiled when he used the rolling pin to push out the crab meat. Thats why the shell was soft. I could be wrong.

Jay Garcia yes .. the rolling pin one is boiled crab meat . The one whereby he used the knife to shave the thick shell at the start is raw . That is when I know the knife is seriously sharp . Oh man the crab roe ... looks awesome .

Awe mizu-yōkan with chestnuts, straight from a wagashi bamboo... delicious! I miss it, one of my favorite desserts when I was stationed in Zama early 90s.

amazing vid. guys! traditional Japanese style service at its best! never seen a Crab cleaned before cooking ! even at that size! this must be a small family restaurant working under minimum reservation only basis ! because it would impossible to serve more than 20-30 hungry costumers daily while keeping such standard high quality service at the same time ,even with 3 chefs behind the bar!

My only complaint is not knowing what everything is. Most of it maybe? I wish it was narrated. After my next outing crab fishing, I want to try a number of these methods in my own kitchen. I love to cook but I enjoy watching a master at work too. Wish we had the bigger crabs here too, Dungeness is fine but I miss the days of having King and Snow crabs.

The last dish at the end of the video, am I correct the liquid is green tea? If not please tell me what it is. But most important could anyone tell me what that desert is? That grey pudding thing? Thanks all. I I'm not a fan of eating crab (just don't like the taste especially the insides, though i do like parts of it like the claw and legs when cooked) but I am intrigued of how they are cooked etc so thanks for the video. We all definitely have different taste (I always fear the thought of shisami and all but always curious and like seeing others trying it and how it is done etc) and I have my own taste that would be considered weird or makes other sick. I'm a big fan of spring onions and eat plenty of it (must be cooked for my cas, stir fried, deep fried, boiled etc, it makes broth taste so much better) and as crazy as it sounds I love chicken skin and the fat (it's the flavour I really love of it).
