Thank you for watching!! (日本語は下にあります!) This Mapo Tofu is not very spicy. So quite friendly with the people are not good at spicy foods!! If you cannot have even tiny bit of chillies, please use miso instead of the chilli bean sauce!!! I highly recommend to make bigger batches if you serve for more than 2 people. Hi!! Boiling tofu keep them firm, so it won't be ended up like puree. And it protects losing moisture when cooking with the meat sauce👍😉

Hello Taku-San, thank you very much for the video. I have question about konbu. I am using Shimaya Konbu Dashi Powder. Is it the same as real Konbu?

Hi futsuu03!! I have researched about your question, Shimaya has many type of Dashi power (Includes the one with no MSG), but they all got artificial ingredients. So it's different stuff to real kombu. But it works though!! Doesn't mean serious poison or anything. I understand it's hard to find kombu depending on where you are. So have a look at the ingredients list on your packet to check!!

But it doesn't have to be Japanese brand. I used Korean brand kombu before which I found in a Chinese grocery. And they worked well!! So please remember about it. It might help you !!

My memories of Japanese cooking are salt, salt, salt. Everything was salty: soy sauce, ramen, even rice balls were salted. I prefer spicy, spicy, spicy foods. The Japanese food was good and I still enjoy ramen, takuwan, and nori. But spicy is better.
