⅛ teaspoon baking powder (optional)

Tried to make this... overmixed the soufflé so it kinda turned into matcha meringue juice. I ended up making just regular matcha pancakes but it was still good. Learned that maple syrup fixes everything, 10/10 I'll try again next weekend

You got it! Let us know if you have any questions! We did this recipe about 10 or 12 times and changed it up to get the right recipe down haha😅. Just make sure you work with your batter fast and dont let it sit idle for too long. And dont over fold your batter or it will be flat!

It's a short recipe it just takes watching each step because it will effect the outcome. If you dont have a lid to cover your pancakes you can use a metal bowl or something when you cover your pancakes while it cooks.

Hi! Our batter was also slightly tacky before we added the meringue. We used regular all-purpose flour for the batter. If by chance you used bread flour instead or used too much flour in general, your initial batter will turn out more sticky due to the gluten.
