Thank you for an excellent recipe Michael. I followed your recipe and instructions and and my pancakes are successful every time. The recipe is super easy to remember with your 4:3:2:1 (sugar:flour:milk:oil) ratio. This ratio even works with tablespoons instead of grams eg. 4 tbs sugar instead of 40 grams, 3 tbs milk instead of 30g etc. One tip I found useful is to add a few drops of water to the pan before putting the lid on so the steam created helps to cook the pancake better. These pancakes are so delicious and my son is now addicted to them!

I've tried this 6 times already and the pancakes hold their fluffiness up until I transfer them then rapidly start to flatten. It's frustrating but I want to perfect it 😂 Might do only 2 servings in order to have more left for a third layer next hoping that, even after it flattens, it keeps some "height". Common mistakes: - putting too much flour will turn the egg yolks a messy hard dough - adding a little bit more flour than what's on the original recipe will turn the pancakes not airy(bubbly) but rather a more softer version of a cake - underbeating egg whites (whisking but not reaching firm peaks) - whisking egg whites with tiny residues of egg yolk/already used and dirty beaters won't make the egg whites foam, they will remain liquid - keep on checking the pancakes and lifting the lid will release the heat inside needed to cook - turning the pancakes when they are still foamy on the bottom will make it crumble the moment you put your spatula under

Great recipe. Totally works. Make sure yellow mix is whipped enough to fold into the whites easily, and the whites stiff enough to keep em fluffy in the pan. Super low heat, 4 minutes a side and you’ll be stylin’

After watching so many souffle pancake recipes, so far this was the only one that worked for me! I also used rings (made from parchment paper) so my pancakes would be more vertical and so it wouldnt deflate too much after removal from the pan.

@@MsThedark12 in my case it made 6 average sized ones. The eggs i used were like 10gr heavier than in the actual recipe, so i had to increase the amount of other ingredients as well; they came out a bit larger than it shows at the end of the video. But i guess it would still make 6 petite pancakes with the initial amounts:)

I tried this and I think I could have mixed the meringue a little more but it was still holding well. My biggest mistake is that I used a pastry bag tip that was too small so I had to make circle and in the end I couldn't make it as high. It was about inch/a inch a half high, but they were amazing. So fluffy and light! And it really wasn't difficult.

Hey all. If your pancake flattens transferring to plate, because you didn’t use enough stabilising agent. In the video he is using white vinegar but you can use lemon juice or any acidic agent.

This is probably my fourth time making souffle pancakes, and this recipe is by far the best! Fluffy, jiggly and perfectly golden brown. I added lemon zest into mine because it adds a nice flavour, and couldn’t be bothered piping them onto a pan so I just spooned them on. Thank you for a lovely recipe!

@おかっぱ野郎 I did it!!!! Turns out my mistake was the way I was mixing the batter with the meringue. You have to let it fold on itself using gravity. The pancakes were so delicious, my boyfriend was trying hard to hide how impressed he was. XD

You should go to a clannel here in yt called hida mari cooking. They bake stuffs very pretty and its such a great asmr video

Just saying u can replace the vinegar in the egg whites with lemon juice or cream of tartar if u have it. Cream of tartar works best when whipping egg whites but most ppl don’t have it so they use lemon juice or vinegar. Edit: same amount for everything btw
