How to make sure the pancakes dont deflate: -preheat your pan on the lowest setting (i really mean lowest) do this before you start the batter at all so the pan gets an even heat -do not overmix the batter, do it until there are no streaks but be as gentle as possible when folding -use the batter immediately after making it, unlike american pancake batters its much better to use it straight away rather than waiting a bit, i've used leftover batter that i left in the fridge for a couple hours and whilst the pancakes are still nice, they aren't anywhere near as fluffy

@@jasminer4859 Yeah I know. But mine completely deflated to a completely flat pancake within a couple of seconds. I did a bit more research on souffles and discovered that most bakeries and KZbin channels which show tutorials for them tend to secretly use commercial stabilizers which allow the soufflé to appear inflated long after they’re done cooking. This person used lemon juice as a stabilizer, so it’s possible that maybe I didn’t use enough, but it looks like one of the biggest factors in making sure the soufflé stays inflated is the type of stabilizer used.

Hot tips for anyone looking to make this (or making it without success): • Your bowl for whipping up the egg whites needs to be super clean. No soap/oil residue, no water. Metal or glass bowls work best, as plastic will hold a tiny bit of water on it for a while after washing (and is more susceptible to holding onto oil/grease). • Bring your eggs to room temp over a few hours - DO NOT soak them in warm/hot water! Egg shells are semi-permeable, so the little bit of water that seeps into the egg _through_ the egg shell may make a big difference. • Older eggs won’t whip up - as easily or at all - compared to fresh/new eggs. I’m not sure if there are any regional differences in eggs/reasonable expectations for them (since the “typical” egg differs from country to country), but these are more or less broad guidelines for any eggs.

Recipe for anyone who finds reading it easier like me! (The ingredients are in the description of the vid so I didn’t add them) - [ ] Separate your egg yolk and white into separate bowls. - [ ] Mix egg yolk with the flour & milk. - [ ] Add the vanilla extract and mix again. - [ ] Take the egg whites and add a few drops of lemon juice to stabilise it. - [ ] Whisk on a medium speed until foamy. - [ ] Once the egg white is foamy, add the sugar and whisk again for about 3 minutes. You should end up with stiff peaks. - [ ] Add 1/3 of the egg white mixture to the egg yolk mixture. Whisk in (you don’t have to worry about deflating the air bubbles at this stage). - [ ] Add in the rest of the egg whites and gently fold in with a spatula. Try not to deflate the batter as you want it airy and fluffy. - [ ] Heat the pan on a low level (3/4 out of 9) with some oil. - [ ] Use an ice cream scoop to put scoops of batter into the pan. Put 2 scoops on each pancake. - [ ] Add 2tsp of water and cover the pan with a lid. - [ ] Cook for 2 mins then add some more batter. - [ ] Add 1tsp more water and cook again for 5 mins (heat 3/9.) - [ ] After 4 or 5 mins, turn the pancakes over and cook for another 5 mins covered. - [ ] Take them out, serve with maple syrup etc. - [ ] Enjoy!

Currently in the throes of following this recipe and here’s my feedback so far (if anyone wants it). Firstly, I had to add an extra tbsp of milk to match the consistency shown in the video. Secondly, ensure your egg whites, bowl and whisk is as clean as possible so they foam up properly. Then double the time you mix the egg white for the second time, because my mixture did not hold its form as it should have. Lastly, make sure you don’t pour the water onto the spoon OVER the pan. I spilt it everywhere it was a disaster 😂😂

It is the easiest recipe ever. The lemon must do something coz the pancakes turned out so fluffy and It was perfect on the first try and I have an old broken stove so it's a miracle. I am in love, 100% recommend

...a delightful and warm production ( the video..), and the preparation so well executed...excellent work, maestro. I appreciate this 'how-to' very much..and the finished product is absolutely sexy. Some would comment, perhaps, that the cooking time is a bit long - but this is the way life is...and yes, there are machines and plates to wash afterward...however nothing worthwhile is quick and easy. For a Sunday brunch, I couldn't imagine anything quite as delectable and heart-warming. I'm sure in a production kitchen a team could pop out 10 plates of this in 35 minutes and truly captivate on-lookers...and how wonderful would a breakfast table look with plates of this served up on oven-warmed plates, enticing the guests with this simple, yet lovely plate presentation ( the strawberries are essential in my mind). 5 stars and 2 thumbs up ( sorry I don't have more thumbs!!). kudos

you probably didn't whisk the eggs long enough, a way to check is almost tipping the bowl upside down or seeing if it will stay in place when you move it

I actually came up with this myself. I had a tried and true pancake recipe but one day I was making an elegant cheese cake which uses stiffened egg whites to make it fluffy and thought I should do this with my pancake recipe. It is awesome

I finally tried this recipe and, oh my lord, its actually so good! The texture of the pancakes is beautiful! For me personally i think adding a teaspoon of cream of tartar to the egg whites really helped them peak! also I used stevia instead of sugar (put it in the flour mixture instead of the egg whites) to make them low sugar and they were phenomenal! Thank you so much xxx

I made this today. It's the best pancake I ever ate in my entire life. I'd make this every single day if I could. My arms almost gave out while making this because I don't have a mixer, but it was worth it. I recommend 10/10.
