I loved buying Japanese Pancakes (Okonomiyaki) as a cheap lunch back in my uni days. They were always cheap and filling, so it's something I went for often. I stumbled across a super easy and gluten-free recipe by blog, Gluten-Free Weekend. I had some leftover Coleslaw mix that I needed to use up and decided to try these as a super cheap recipe. They were really delicious and very similar to what I'd buy from the local Japanese takeaway shop. According to Matt, they were even better cold.

Notes:
*I used Coleslaw Mix, with carrot and both red and white cabbage. Instead of just white cabbage.
**I would recommend making these in 1 cup portions, so you have around 4-5 smaller pancakes, instead of just two. These were HUGE and they are very filling.
