How do you compare the taste of it to fresh ginger? I'm tempted to make this. (I have search for beni shoga recipe before but as i remember they all called for young ginger so i was discouraged to give it a try)

You mean the difference between young ginger and regular giger root? The biggest difference between these two is the color. If pickled without red perilla, new ginger turns into pink, and regular ginger root turns into yellow. New ginger has less spiciness and less fiber when eaten raw, but when pickled in sweet vinegar, there is no big difference in taste for me.

Now it's ginger harvest season (autumn), so new ginger is on the market.
