Miwa i am from india so i cant find miso paste here anywhere so can i use hummus to make miso soup all these days i used veggy soups but i want to taste miso soup which i have never tasted if u can. Tell any way i could tell my mum and she could make me yes but i am still young not adult haha . Ur video was amazing

Omg Dinosaurs! I'm so unbelievably jealous....I'm going to add that museum to my bucket list and the dino hotel! That really puts the natural history museum here in London to shame, the dino section is small in comparison.

Dear Miwa-san, I made this pickled ginger and it is amazing! The taste is so fresh, so wonderfully sweet and sour at the same time. I love how you suggested to adjust the blanching time to adjust the pungency. The only problem is that I just could not wait overnight for the flavors to ripen. If it is this good fresh, cannot wait to taste it tomorrow 😁

I LOVE the smell of ginger. I can't help but pick it up and smell it a few times while in the store (I try to make sure no one is looking. LOL). I do the same and smell my hands after working with ginger, I thought I was the only one that did that. It is the BEST smell!

Found this channel a couple of days ago and have already watched a lot :) Love your energy and how much love you put into everything you do. Your family is lucky to have you. Also, I’ve already fallen for Japanese cuisine, it seems very healthy, diverse and mouthwatering 🙂 Now my goal is to prepare my own miso soup from scratch, maybe will have it first in a restaurant to have the right idea if the taste😅 Thank you for this channel and nice relaxing music you put into the videos. Oh.... i miss japan so much. Japan was my last trip beofre the pandemic. My girls hsut love it there that we go every year for the last five eqrs... unitl Cpvid. Ginger looks good 👍

I finally started making this and now we always have a cute jar of homemade gari in the fridge that I plan to restock every few weeks with a new batch. I also showed my mom how we will use the pickling juice to make a salad dressing later once the gari is used up. I, too, was enjoying having my hands smell of ginger. :3

thank you very much for your kind word!!! to balance out with the tanginess of the vinegar, there are usually lots of sugar contained. If you reduce the amount of vinegar, you can reduce the amount of sugar too! I'm glad to hear you enjoyed the vlog part!

I usually buy mine in the supermarket but I want to make my own to avoid unnecessary chemicals. By the way, I recently made chirashi sushi and followed your instructions to make the rice. Ever since I learned that pickled ginger cleans the palette, I started eating it "the right way" instead of a seasoning. It really helps me appreciate milder flavors like the sweetness of rice, if I can wash the stronger flavors off my tongue first. I love the taste of ginger, so I have to try this recipe! (Sometimes what I get at the store has a really pungent vinegar flavor that I don't like)

you know the nest way to incorporate pickled ginger into your meals!! If you find it's a little bitter, blanch ginger longer before you soaked them into the marinade! please adjust the amount of vinegar too if you are sensitive to tanginess. it's listed on my blog!

Hi Miwa-san...oh my goodness I am going to try both the pickled ginger recipe and salad dressing. It wasn’t as complicated as I thought it might be. Thank you so much for these great ideas. I loved watching your family enjoy the Dino Park....it looked liked so much fun. The food was so cute because it even had the dinosaur theme....hamburger bun in the shape of a Dino foot 😂. I'm trying to remember if I ever tried making gari.... perhaps one time many years ago. But since it's so readily available even here in Europe I usually buy it ready made. It is more difficult to find young/really fresh ginger here. But I probably should try making it next time I have a whole ginger root. Last time I had a whole ginger root (usually buy the readily grated jars for convenience) I made ginger tsukudani. Have you ever tried gari chahan? or I even mix some chopped up gari through the sushi rice when making chirashi sushi to get my daughter used to the taste. or I use it in tempura batter (instead of beni shoga for a milder taste) It's great with tofu or chicken. What I great idea to make a dressing with leftover liquid (even if you buy ready made).

i love the ginger smell too ! I have a question it is possible to make it with the minimum sugar possible ? because i´ve seen that there is quite a lot of sugar involved in the recipe .

yes it has a lot of sugar contained. you can reduce the amount of vinegar and add more water to reduce the sugar content. I tried a couple time, and the ratio I showed in the video was good to me.BUT I totally understand that's a lot of sugar. 😅

Japan ginger is so big than what we use here in India... Won't your ginger be strong even after blanching... Here the ginger is used as medicinal item and we use it for our regular day to day cooking... We make tea using ginger and sometimes make herbal soup called "Rasam" for our lunch...

Do you have to blanched the ginger? I have seen recipes that do not blanch the ginger.

you don't have to. I just find the ginger too pageant without blanching. I think it's a personal preference^^

It's different! benishouga doesn't have much sweet taste, more on the salty and tangy side. but this one is more on the sweet tangy one often served with sushi.

I bet you could, but rice vinegar or even coconut vinegar are less harsh so the ginger would taste better.
