Japanese Potato Salad with Soft Boiled Eggs
Difficulty: Very Easy
Time: 15 min
Number of servings: 2~3
Ingredients:
2 cold eggs right out of the fridge
300g (10.5oz.) potatoes
3 tbsp. mayonnaise
salt and pepper
Directions:
1. To make soft-boiled eggs, cook the eggs in boiling water for 7 minutes, place them in water to cool, then peel.
2. Peel and cut potatoes into chunks. Place them in a microwavable container, cover, and microwave for 6 minutes.
3. Add eggs, mayonnaise, salt and pepper, then mash with fork, leaving small chunks for texture.

I actually do like Japanese potato salad, had it several time when I was back in 2018. would be better if you add a little fine chopped onions, and a small dab of mustard to make it tangy

Everytime I boil eggs straight from the fridge, they just "pop" then start to leak and I end up with half the eggs.

If you take a pin and poke a tiny hole in the bottom of the egg, they tend to break less.

Yes, because of the temperature difference. Leave the eggs out a bit at room temperature to prevent them from cracking in the boiling water

It's What College Kids Use Cause They Don't Have Room for A Stove or In Many Cases, The Money for A Stoves Even if Room Isn't The Limiting Factor.
