I have learned so much from ALL your recipes Chef! As a Greek American, I always make potato salads with Greek Olive oil and vinegar and dislike mayo based potato salads. But your mayo based sauce was the best I've ever tasted. Most importantly, my grandchildren loved it!!!! Chef, Thank you for sharing your amazing recipes with the world. I look forward to all of your new recipes. Regards from Anna from NYC 🗽

Hi Anna, thank you for your kind words! I'm happy to hear you family enjoyed this. I'm generally not a fan of mayo either, but this potato salad is one that I make an exception for. I do enjoy a potato salad with olive oil, vinegar and herbs though, especially in summer.

I‘ve made this six times. it’s such a wonderful recipe. I live in Europe and I couldn’t get Japanese mayonnaise. I use the normal one and since you said the Japanese one has more umami flavour, I put half a teaspoon msg into the mix. Thank you so much for this recipe

I've had that peeler for over 20 years and I never knew that the end was for removing the eyes from potatoes!🤯 Thanks for the great recipe and all the extra knowledge you always include.🤓💖🧠

I kinda thought some folks might know what that is for, so I included it😄 Old school peelers have it too, but they're harder to use because the whole head swivels.

I just made this today, but without the ham. I was interested in making it because I had Japanese potato salad recently at a Japanese garden. I think I'll reduce the amount of rice vinegar next time. I think I'd like it with less of that "bite." Very good recipe, though. Thank you.

This brought back a lot of memories for me too, man. Fun fact: I watched this after JUST waking up and being neboketeiru. I looked at the potatoes going by in the ingredient fly-by, and thought: "Holy sh!t, those are the most burnt-up takoyaki I've ever seen!" hahahaha あ〜、アホや、おれ。LOL

😆 Well they were some dirty potatoes. That scene where I throw the potatoes into a bowl water splashed mud onto everything on that side of the kitchen (including the camera). Took over an hour to setup and clean up that shot. 😅

I like potatoes and I’ve never met anyone who dislikes potatoes. For research purposes I like to ask people if they have ever known a person who dislikes potatoes, and the answer is alway “no”. Not eating them for health purposes is one thing and not liking them is another. So…have *you* ever met anyone who dislikes potatoes? 🧐

Interesting question.... I know people who avoid potatoes, but I'm not sure if it's for health reasons or if it's because they don't like them.

That salad is called "ENSALADA RUSA" - with a little twist of Japanese vinegar and the use of cucumbers, we usually use peas in ensalada Rusa, and usually add olives, some might ask why is it called Russian Salad?? I don't know that question, but the very Eastern part of Russia, is pretty close to Japan, so maybe it is originally Ensalada Japones, or maybe even Ensalada Edo, invented during the Edo Period? All Tokyo aside, the Japanese cuisine is some of the best in the World, they excel in the Udon & Umami game, the mayonnaise which is in a Japanese style with umami, can actually be made in the kitchen, using olive oil, egg yolks, salt, lemon juice, pepper, and mix in blender, you don't have to buy it in the shop, some of which cost $10 a jar in Coles or Woolies, the ingredients used would cost you about $1 to $2, and here's the best part, you know what went into the mayo.

@@onlyinparadise4613 Oh, of course, you'll find every variation under the sun. There's no single and definitive, "Japanese potato salad," recipe, after all. If you want extra sweetness, go ahead and sugar bomb it. lol My mother-in-law, who is more Japanese than Mt. Fuji, is the type of person who sugar bombs EVERYTHING. @onlyinparadise46136 ай бұрын
I think rice vinegar would be better.
@Maplecook6 ай бұрын
White vinegar also has alcohol in it. And, it's your dish, so yeah, you can use it. Will it be the same dish that Marc made? Not really. It's major change in the character of the thing.
@NoRecipes6 ай бұрын
Rice vinegar does not include alcohol. Vinegar is the product of the final stage of fermentation (i.e. sugar > alcohol > acetic acid). You can read more about the process here: en.wikipedia.org/wiki/Vinegar As for using white vinegar, it's a little more harsh than rice vinegar, but you can use it to make sushi vinegar (which is a blend of rice vinegar, sugar, and salt).
