Quick Pickled Carrots that are good for you. Randomized controlled trials suggest that two teaspoons of vinegar with a meal may improve blood sugar control, blunting the blood sugar spike by about 20 percent.
However, drinking it straight can damage the esophagus in several ways, including causing acidic burns, ulcerative injuries, and necrosis.

@@zarabbbquick pickling (this video) is not the same as fermentation which is a slow process. Results can be similar and fermentation does produce things like *vinegar* and alcohol, just like in the quick picking video the veggies are boiled in vinegar. Both have vinegar and both taste sour. I suggest finding a short video on the topic of quick pickling vs fermenting

A healthy snack from childhood: slice an onion, separate into rings, drop into a bowl of vinegar, add a pinch of salt. You get that vinegar, plus onions (an easier source of vitamin C to digest than citrus). The vinegar facilitates the digestion of raw onions, and there's no pickling process necessary.

So, pickling is considered "cooking", and is that also part of the fermentation process?? I really need to find some more infor about both processes, how to properly do it depending on the food, what the benefits are, how to use them, etc etc etc.... 😅
