I love how most these 18 century recipes are 80% extreme vague, 10% comparable to modern recipes, and 10% bizarrely specific about things that don’t even matter

Shows you how much more . . i would say independant, but don't take in the same spiel as other modern people may. It was just traditional ubiquity. The classic "well, we've always done it this way." So thry were writing for an audience that were assumed to know the basics because it was, i dunno if cultural is the right word, just the most practical i guess.

@King Kamala I don't think it's an act. I know some folks who have worked with him or bumped into him around the city. His demeanor here is true to life. The character he plays on the show has a similar demeanor, but is also very socially naive. Here, Joe is leaning into the style of 18th Century Cooking with his jokingly simplistic questions and remarks. He's a good guy, and his tv show is the kind of show everybody should be watching.

Joe has way more patience than I do! I would've just sprinkled the pasta on the bottom and been done with it -- but it probably wouldn't have turned out anywhere near as pretty as Joe's did.

You guys are just so adorable I could just eat you up! More please, of Jon and Joe. So entirely endearing. The world needs more men like you. The frame of them sitting on the stools waiting for their pie just puts me over the edge!

Something about Joe being here (new to the content) gives me another another level of appreciation for Townsends. Just gives me a look into his sense of humor and a little about who he is. Love it.

Joe seems so nervous on camera but once he becomes infatuated with his art of cooking he just becomes himself and seems to forget the camera is even there so wonderful to watch how much passion he has in those moments

That talk of skinning an animal, reforming its meat ans stuffing it back in the skin reminded me of a couple of dishes from Eastern European Jewish cuisine that my family still makes, and a lot of other families too. One is filled goose neck (pretty much what you described) and gefillte fish (stuffed fish, same deal). So it's not as crazy as Joe might think.

Can you describe that fish to me? Like do you take the fish skin off and cook the flesh then put it back in like a sausage. Personally I like fish skin but I wouldn't think to remove it before cooking the fish.

I know this channel started as kind of a instruction manual for Townsends products, but it turned out a whole bunch of people (myself included) tune in for a sheer wholesome experience. The gentle pace and the warmth of the presentation (both visually and in the hosts) is just healing in these fast paced times. Also the dynamic between John and Joe is just so fun and entertaining. Really hope there'll be more of them together. One of my favourite episodes ❤

Yup. More Joe Pera please!! One of the biggest factors of living in the time frame that is depicted here was that things took time, there was literally and I mean literally nothing else to distract you from the task at hand. Whatever time it took to do something is the time it took and that was your focus, that's ALL, your focus was. I feel there should be an episode to emphasize that fact that you had so much time on your hands, and yet, it took so much time to do much of ANYTHING at all!

DO keep in mind, there was ALOT of work to be done. I was thinking to myself that this pie took WAY too long for just a side dish. And just like all chefs, they would have been using the baking time to make other things, not sit around and watch the oven do oven stuff.

This is going to get over read. I'm okay with that. I'm just putting this out in the atmosphere so that I have had it publicly stated.... This is legitimately one of my favorite things I've ever seen ever. I absolutely love Joe. I absolutely love your content. But put together? I just never thought.... The possibilities now... Know that you have changed my life. Maybe Primus will have a concert where you can who float in a pool and have margaritas and sample different types of charcuterie boards and different kinds of pie.
