Love the channel here in the blue ridge mountains in western North Carolina, I'm sitting at 4,840 feet above sea level still living the mountain way up in these old hills! My father passed away on December 31 2021 we actually watching one of you and Hannah's catfish videos took us both back to some of our own adventures! Every moment counts hold on tight!! I love watching you guys do stuff together….I’m going to let you in on something…. You know if you burn the RUE then it’s no good and to keep mixing rue is a pain.. So i found this secret and it works great with every gravy…. If you spread out your flour on a baking sheet and bake it at 350 til its golden brown you can just add it and not worry about trying to not burn 🔥 it in the butter…

You can never have too much garlic. I bet that tastes amazing. I've never had soft shell turtle but I do love snapping turtle. We generally pressure cook the turtle before frying them. But they're always delicious.

Wow! That looks so good! My stepfather's mother fried up some softshell turtle when I was a kid, and I remember that it was one of the best meals I ever tasted. I love the daddy-daughter rapport that you and Hannah have going on. I am happy for you both. My father's side of the family lives in Alabama; I've always loved that part of the country. Tomato Paste Hack - Open both ends of the tomato paste can. Take one side off, then use the other side and push it through the can which will push the paste out of the can. Just be careful not to push it too hard or you will probably drop the metal part into whatever you are cooking. It should slide out pretty clean.

That was good to see you both again and I have to say that I don't think I ever ate turtle. Never did catch one. When I see them in my yard I know they are heading toward the pond they were hatched in so I pick them up and carry them over to the pond because it is at least a 100 yards to that pond from my place.

I have a lot of family in southwest Mississippi and Louisiana. I have a great Aunt who married a Cajun and along with my other family members can really cook. My Grandma made a stew from soft shelled turtle that is slap yo mama good. Grandma put jalapeno peppers in hers. Grandpa liked "hot" food with a kick.

That's the same way I do it Jeff. I always add way more Onions, celery,and peppers that's called for. and it sounds like the same recipe my dad and I used for both shrimp and squirrel stews. I always brown the tomato paste and never add any other tomatoes to it.

11:35 mountain when I got notice of your Cajun cookery. Wasn't going to eat lunch today but I think I'm going to go fix something now. Looks delicious, but I'd have to leave out the hot sauces and substitute the flour with either rice or buckwheat and no tomato paste maybe one can of diced. Approaching 71 those ingredients would give me heartburn and at this age is just not worth it. Used to be able to do all that stuff when I was younger but about all I can get away with now in 2 to 4 drops of green jalapeno Tabasco in my scrambled eggs for breakfast. Appreciate you all!

I guess that hillbilly lifestyle ani't all that bad. Hard work, happy times & good food. Although I've never tried turtle, I hear it's good. Nothing better then getting together with family & friends around food that's cooking. I'll be visiting some of those hillbillies up in Northern Maine here in a few weeks.
