Just made this yesterday and it was SO good. I might reduce the amount of coconut milk next time for my personal preference but otherwise, it was great!! Even my partner liked it and they aren't a soup person 🎉

If I wanted to add more protein, do you have a meat suggestion? Or think I could add lentils, beans, etc?

I think lentils would be an easy addition! I would suggest increasing the amount of broth and reducing the amount of wild rice & mushrooms slightly

I am also curious about your wild rice. It looks like you used something with a mix of wild rice and other rice. What brand is it? Also, my husband hates mushrooms. I'm thinking of substituting zucchini or cauliflower. Is there another vegetable you think would work well? Thanks for all of your content!

I noticed this too - looks like short grain rice or pot barley with the wild rice
